Ratatouille

Reviewed: May 17, 2010
I really like this recipe, and I enjoy the fact that I can switch up the veggies. It is hearty and healthy. Even my husbands enjoys this one!

Sweet Potato Soup

Reviewed: May 4, 2010
Yum! I just made this soup, using what I had on hand. I only used about 1/2 cup chopped turnip and subbed carrots for the regular potatoes. Had to use maple syrup in place of the sugar and used milk instead of cream. Oh, and I also used less nutmeg, as mine is strong. This was TERRIFIC!

Using the alterations HOLLYE45 suggested (using EVO), I made these for a work function, which will be tomorrow.. What a great success, they look fantastic and taste amazing!

Baked Vegetables I

Reviewed: Apr. 27, 2010
These were very good, better the next day. Extremely wonderful in a brunch casserole: 6 beaten eggs poured over these veggies and cooked ham, bacon or sausage baked in a greased casserole dish for 45 min and then sprinkled with cheese, baked another 5 minutes (or until egg is set).

Creamy Twice-Baked Potatoes

Reviewed: Apr. 22, 2010
These were easy to make, and freeze very well. I just threw the frozen ones in the oven for about 45 minutes on 350 and they came out great! Thanks

Sausage Mushroom Appetizers

Reviewed: Mar. 14, 2010
These were pretty good. I would give these a 3 1/2 stars really. I used a mild, sweeter sausage. I would try them with a spicy sausage next time, and more than likely they would rate higher in my book. Great for a change.

Portobello Sandwiches

Reviewed: Feb. 28, 2010
I really enjoyed these. My husband did not. They were a bit too moist, making the bun soggy, but if I play with the cooking time a bit, or perhaps fry them prior to putting them in the oven, that may provide a solution.

Tami's Peanut Butter Cookies

Reviewed: Feb. 24, 2010
The virtually guilt-free peanut butter cookie. Still moist and tasty after the 1st, 2nd or 3rd day...If they last that long!

Carrot Cake VIII

Reviewed: Feb. 11, 2010
Loved it! I halved this recipe, and made cupcakes, baked for 20 minutes. My husband won't touch nuts or raisins, so I omitted those and added a little extra coconut. Turned out perfect. Thanks

Ham 'N' Broccoli Hash

Reviewed: Feb. 5, 2010
On its own, it didnt have enough flavour for my family. I really do like the idea though, so I added a small tub of sour cream, 1/4 C diced onion, 1/2 C grated cheddar, 1 clove minced garlic and 1 can cream of broccoli soup. Bake covered for 1 hour at 350...Out of this world!

I had to re-review this. The more I eat it, the more I love it! I always add black beans to this, as per our taste. Great recipe, thanks!

Grandma's Easy Turkey Taco Salad

Reviewed: Jan. 4, 2010
Fantastic! I prefer my dressing 1/2 low fat ranch, 1/2 salsa, otherwise stuck to the recipe, and it was wonderful and healthy.

Angel Food Cake II

Reviewed: Jan. 4, 2010
As someone who never made an angel food before, this was scary! I decided to try this in muffin tins, so I had to judge the baking time. They were done in about 13 minutes, and didnt really look done, but the toothpick test doesnt lie. I am so proud, perfection! Thank you!

Soft Chocolate Chip Cookies II

Reviewed: Dec. 21, 2009
These were nice. I would have to suggest that when creaming the butter and sugars that you whip for at least 3 minutes to be sure that they have the right texture. I would make these again.

Soft Christmas Cookies

These were extremely good. I halved the recipe, and used an already prepared frosting with coloured sugar to top them off. Even a very finicky family member asked for the recipe. Thanks!

Greek Garlic-Lemon Potatoes

Reviewed: Nov. 29, 2009
These potatoes are definitely a "go to" for our family. We prefer rosemary to the oregano, and I use chicken broth as suggested by another review instead of the water, without adding any additional salt. What a great recipe, thank you!

Banana Crumb Muffins

Reviewed: Oct. 12, 2009
I added the vanilla & spice as others suggested. 2 of my 3 bananas were un-usable, so I substituted a melted all-natural, frozen strawberry bar. And I forgot to add the flour to the topping. And they turned out fantastic! These turned my terrible day into terrific!
