I love my little family and am NOT a natural in the kitchen! I love to bake but never know what to cook. My husband is the real chef at our house and I like it that way :) I post a lot of pics and recipes on my blog
My favorite things to cook
anything with chocolate...oh wait cook? specialties are homemade mac n cheese, potatoes au gratin and chicken enchiladas. My favorite side dish to make is olive oil and rosemary roasted potatoes. I love potatoes!!!

oh geeze...I don't know? I never liked to cook I always left my mom and sister to do that and was in charge of dessert...that's what I like.

I haven't tried anything too hard yet! I'm terrified of cooking for a dinner party! I'll let you know when I ever do!
My cooking tragedies
Don't you hate it when you burn everything!?? Not just the main dish, but the side dishes and even yourself in the process!?!? lol

Chocolate Zucchini Bread I
I love this recipe! I tried it recently and have been making it a lot's become a staple! I ran out of zucchini and made it with shredded carrot and I also ran out of eggs and so replaced each egg with 1/4 cup applesauce and it turned out great. I didn't stir in choc. chips but sprinkled chocolate chips over the top before baking. I took this to a large gathering and had no leftovers and plenty of compliments. I also made these into muffins the other day because my daughter had been asking for cupcakes and so these passed off as chocolate cupcakes. I just cooked 20 minutes for muffins.

Rolled Buttercream Fondant
I gave this 4 stars because it was very easy and quick to make and easy to handle. I used it to decorate sugar cookies. The taste was fine but there is one thing that I can't stand about it, it is so greasy! I actually took a paper towel and laid it over one of the cookies and it instantly started sucking up grease, and it was still greasy after, pressing the top with a paper towel ruins the smooth surface. I also don't know if I needed to do this, but someone suggested painting some regular frosting on the cake or cookie so the fondant would stick, I just painted on some corn syrup and that seemed to work. I think I'll try a different recipe next time just because of the grease factor.

Texas Chicken Quesadillas
This is a good recipe. I made halve the recipe and barely had any BBQ sauce left but I managed to squeeze enough out of the bottle to at least get a light coating on all the chicken. My husband thought it was good.
