San Francisco Pork Chops

I rate this a four based on the recipe. With a few modifications, it can be a five. Cooking 3/4 inch chops 30-35 minutes is way too long. Cut it back to no more than 10 minutes per side. If you are using thinner chops, reduce the cooking time even more. If saltiness is an issue, use low-sodium soy sauce and broth.

Chicken Stir-Fry

This is my go-to recipe for chicken stir-fry. It is easy to fix, contains ingredients many people will already have in pantry/fridge, and is easily adaptable to accommodate a variety of taste preferences. It's good just as written. Suggestions: if you want it saucier, then increase the marinade ingredients by 50%, if you want to use bottled minced garlic and bottled chopped ginger that works just as well as the fresh stuff, and if you have spice-averse eaters (kids), then cutting the pepper in half or not including it does not detract much. Oh yes, using low sodium soy sauce in lieu of regular soy works fine.

Fajita Marinade I

This is a very good marinade. Use it all the time. It is easy to make, only requires a few simple ingredients, and appeals to a wide variety of taste preferences including kids who tend not to like really spicy.

Pork Chop and Rice Casserole

This is really good. Easy to fix and not that expensive if you use pork chops you got on sale. I have prepared this exactly as written and prepared it slightly modified in order to use what I had on-hand (substituting Cream of Mushroom for Cream of Celery). Both ways produced stellar results. The only modification I now make is to add a little bit of ground pepper to the meat before it goes in the skillet.

Sloppy Joes II

Excellent, Easy, Cheap. I did add another quarter cup of ketchup -- used 1/2 Heinz and 1/2 Country Ketchup by Stonewall Kitchens to give it a little kick. I found that 20 minutes cook time was all that it needed.

Balsamic Roasted Pork Loin

Followed recipe exactly. Turned out great! Easy, Easy, Easy. Used Montreal steak seasonings. Let it marinate for 4 hours. Had a roast that was slightly less than 2 lbs. and it took approx. 70 min in a 350 oven. Basted every 10 min. Started checking meat temp at 50 min.

Baked Chicken Spaghetti

It was great. Easy to fix. Tasted real good. Tastes just as good, if not better, two days later. I followed the recipe exactly, using gluten-free pasta rather than regular. I think that if a 3yo was not in the household, I would double the cayenne.

Garlic Spinach

This was good especially if you like garlic. Tried this a second time and used just two cloves of garlic a bit less than a teaspoon of garlic salt. That seem to hit the spot with my family particularly the 3 year old.

Korean BBQ Short Ribs (Gal-Bi)

Tastes great! Even my grandson (age 3) liked it. Easy and quick. I followed this recipe "to a t" and it was fine, although it may be a tad salty for some folks. Just remember, you need to plan ahead for this since it requires some time to marinade.
