The Best Meatballs

We LOVE these meatballs! I made them exactly as stated, only sustituting milk for the water. Well worth effort - excellent with "Best Marinara Sauce Yet"! Will be a family staple for years to come!

Mushroom Chicken Piccata

My husband and I both thought this was excellent, plus we loved the fact that the sauce wasn't full of butter. I cooked the chicken thoroughly in the pan, removed it, then made the sauce...I didn't simmer them together as I think it would have made the breading very mushy. We can't wait to have it again! *UPDATE: As much as we liked the original recipe, we LOVE this version: Skip the whole chicken process and go straight to cooking the veggies and sauce. After sauce has thickened, toss in a green vegetable (we use broccoli florets, snap peas or asparagus), then a bunch of peeled, raw shrimp. The shrimp only need a few minutes to cook, and this will keep your green veggie from getting mushy. Serve over pasta - YUM!

Southwestern Egg Rolls

These were great - I think my husband may love me a little bit more each time I make this recipe :) I love the fact that it's actually fairly healthy, and can be used as a main dish - not just an appetizer. I followed the recipe exactly, I simply chose to bake them at 400 for about 15 minutes instead of frying. This actually makes the recipe much more quick and easy too - after filling, simply spray with olive oil spray and bake until crispy (no need to freeze!) I was able to put these together in the morning, refrigerate until our party, then bake at the last minute - which is SO handy. Since we liked these as is, I probably won't try the egg roll wrappers, as others have suggested. I am going to try making the filling, and freezing it in batches for quick preparation in the future!

Mrs. Sigg's Snickerdoodles

I've been making this same recipe since I was a child! Cookies have a great taste, and always look nice. Take them out of the oven while still puffy (I bake for 10 minutes for oven), and allow them to sit on the pan for a few minutes after baking. Cookies will flatten a bit, but still look nice and stay very chewy after cooling. I halved the amount of cinnamon simply because I don't like the darker color that the full amount gives the cookies. I used parchment paper on my pan and had no problems with the bottoms browing too much. If you're looking for a tasty, chewy, bakery-like Snickerdoodle recipe, feel confident in using this one! One batch made 26 medium-sized cookies.

Stuffed Mushrooms with Spinach

Although I plan to alter the ingredient amounts a little the next time I make these, I still had to give it 5 stars for being so tasty! For my taste, next time I'm going to add a bit more bacon and either more parmesan or a little mozzarella. I rubbed the dish with a little butter and sauteed the onions/garlic in a bit of butter, but didn't see the need in adding even more butter at the end. Really a great recipe, I just want to make sure that the tastes of the parmesan and bacon are able to hold up against all of the spinach! OH - like others have mentioned, for some reason these seem to take longer than expected. It's not as simple as mixing the filling and stuffing the mushrooms, so plan ahead!

Hot Artichoke and Spinach Dip II

Creamy, yummy...just great! We add a few dashes of hot sauce just to give it a bit of a kick, but it's not hot by any means. Definitely give this one a try!

I've made this recipe SO many times, and it's a hit every time! I usually use a bit less liquid smoke, but other that I wouldn't change a thing! Excellent make-ahead dish to serve a crowd, and you can enjoy your guests!

Sandy's Chocolate Cake

I only used the cake recipe, but it was excellent! I feel like a lot of from-scratch cake recipes end up being too dry, but this was wonderful. My husband commmented that this was the best chocolate cake he had ever eaten, and I'd have to agree! I'm not a huge super-chocolatey fan, so I used a vanilla buttercream to fill the layers and lightly frost the outside. Then I made a chocolate ganache that ran over the top and sides, and shaved white chocolate on top. I will absolutely be making the cake again. I think I'd better go have another piece right now!

Mom's Turkey Sausage Patties

We thought that these were excellent - tasted just like eating regular sausage! My toddler loved them, and I'm thrilled to have another healthy option that she enjoys. I made them just as directed, adding only a touch of canola oil to the pan to fry them. My *only* complaint was that I didn't care for them as much leftover - they got pretty dry. Unless you have a big family (or don't use the whole package of turkey), you'll end up with lots of sausage! I'll definitely be making these again and again, but plan to try freezing them before cooking so that we can have freshly cooked patties anytime. Thanks SO much for this recipe! **Updated: I now shape my raw sausage patties, layer in a freezer container with waxed paper, and freeze until needed. I've thawed them before cooking, or even just fried them from frozen patties. The touch of canola oil in the pan really makes the difference in a great-tasting patty! Now that I can easily have freshly cooked sausage anytime, I love the recipe even more!

A Very Popular BBQ Sauce

After realizing at the last minute that we were out of BBQ sauce, I used this recipe in for the grilled bacon-wrapped barbecued shrimp that we made tonight. It was great! We really enjoyed it, and I love having another recipe that I can use in the place of a store-bought product! Unlike some of the other recipes, this one used ingredients that you're likely to have on hand. After a quick mix and boil, we were ready to roll. Thanks so much!

Everyone agreed that this was a 5* recipe, even my husband who doesn't like desserts much. My mom and I both commented that the only thing that would make it more special would be to drizzle them with a raspberry sauce prior to serving. Can't wait to try!

Truck-Stop Buttermilk Pancakes

**Update: I had been thinking about these pancakes ever since I made them last weekend, but I didn't have enough buttermilk to make more. I finally broke down this morning and tried them using half buttermilk-half milk/vinegar. Although the texture and appearance was the same as the original, I just didn't think that the taste compared! I also don't care for these after they've been frozen, so I'll have to scale the recipe way back to make only what we need. I love freezing the Pumpkin Pancakes recipe from this site, but it seemed like the taste of these pancakes changed after freezing!** I was looking for a pancake recipe that would make me think I was spending my morning at Cracker Barrel. My husband says that they don't necessarily taste like Cracker Barrel's (although I think they're pretty close!), but he did say that they are definitely five star! I really think that using buttermilk is the key (not a substitute). We'll definitely be making these again! Oh- I only made a third of the recipe, and it made at least 15 5-inch pancakes!

Absolute Best Pancake Syrup

I was hoping to find a recipe to replace store-bought syrup, and I think we've found a winner! Keep in mind, this really doesn't taste at all like typical pancake syrup, but it does taste wonderful. To me, the syrup tastes like I put some iced cinnamon rolls in a food processor and pureed them! Be careful to use a big enough pot -- mine was fairly small, and barely contained all of the foam that is produced when the baking soda is added at the end. We used this recipe with the Grain and Nut Whole Wheat Pancakes recipe from this site - will be a definite repeat combo in the future!

Black Bean and Couscous Salad

A very healthy and great-tasting recipe that I'm looking forward to making again. It's the first time that I've had a couscous recipe that didn't taste dry. Would make a great picnic or BBQ dish for a crowd! (I'd at least double it for a crowd, though.)
