Tomato Florentine Soup I

I LOVE, LOVE, LOVE this soup! On top of that, it's so healthy...you can't lose. Perfect paired with a green salad. **The first time I made it, I thought it was a little bland. From then on, I added 1/4 tsp. crushed red pepper, and it helps SO much! I use acini de pepe pasta, and it works so well. We will make this for years to come!!

Sauteed Portobellos and Spinach

If you love spinach, very good and very healthy! Some didn't care for it totally...but they aren't huge spinach people. Seemed a little dry...maybe a bit more wine next time?

Creamy Veggie Fondue

Very yummy, but I didn't care for the way it felt in my mouth! Others said that the cream cheese was grainy...maybe that was it...not sure how to tell which cheese caused that feeling!

Kabob Marinade

Excellent! I've only used chicken, and it's so tasty! If you just marinate the whole chicken breast, it won't totally penetrate the meat. It's better to cut it up...go for the kabobs! Sometimes I use just a tad less soy sauce...if you have very small pieces of meat, they will tend to taste too salty.

Simple Whole Roasted Chicken

EXCELLENT!! Chicken stays very moist and has such a wonderful flavor. How handy that it only takes an hour! I've made the recipe multiple times exactly as it directs, and I wouldn't change a thing. I have started to line my roasting pan with aluminum foil, however, as the pan gets to be quite a MESS! Wonderful fall flavors, but perfect for any time of year! *UPDATE- I can't tell you how many times I've made this, and how many copies of the recipe I've handed out! It's so easy, and works every time - EXCEPT once: I usually make two 3 to 4 pound chickens if we're having a dinner party, but once I tried just using one 7 pound chicken. To my surprise, it tasted nothing like the normal recipe! Maybe it was too thick for the flavors to sink in...I don't know, but I'll never use anything more than a 3 or 4 pound chicken again!

Pumpkin Pancakes

An absolute family favorite! I've made these for anyone and everyone...rave reviews from all. I add a little extra milk to thin the batter a bit and use a tad less allspice, but otherwise keep the recipe "as is". Perfect for cool fall mornings, but I can't resist them any time of year! I always make more to use the whole can of pumpkin, then freeze the rest for quick breakfasts anytime.

Dog Treats I

My dogs can't get enough of these tasty treats! When baking, place them close on the sheet to save space, as they don't spread/get bigger. So fun to use with cute packaging to give dog lovers as gifts!

Chocaroon Cake

I was a little disappointed with this one. The bundt cake itself was pretty tasty, but just a little dry. I used the Satiny Chocolate Glaze recipe to top it off, and that helped the cake a bit. As for the coconut filling, it was just totally dry and bland. I may as well have dug a tunnel through the cake and stuffed coconut through it (no, I didn't use old coconut). I guess I was expecting a consistency more like the coconut in an Almond Joy or a macaroon...I just didn't find that here. All in all, I thought that the cake's taste was just okay. To end on a good note, it does have an attractive presentation!

Baked Flan

Is it normal for the top to be very brown while baking? It didn't affect the taste, but wasn't very attractive. Very thick and creamy...quite good. I baked it a little longer than suggested, but it still wasn't quite long enough. Even after refrigerating, the very center portion was a little runny. Might have to make a few changes for next time.

Grandmother's Pound Cake I

Cake had a good taste (very dense and moist) and had a great consistency for decorating. As it cooled, the tops flattened a little making the layers sit very evenly - I made a double layer round cake. My only complaint is that the edges were quite crispy and tough. I used high quality baking pans and was careful not to overbake the layers. Maybe the temperature was a little too high? Next time I'll try baking at a lower temp. There will be a next time!

Quick Lemon Poppy Seed Bread

Used a bundt pan as this tastes more like a pound cake than a bread. Also mixed a glaze using confectioner's sugar and lemon juice. Would make excellent lemon poppyseed muffins ~ can't wait to try in a Texas muffin pan!

Great picnic pasta salad that everyone will like! I would suggest using just a little more dressing or a little less pasta for a good balance. I don't enjoy this left over -- it gets too dry.

Connie's Zucchini "Crab" Cakes

I personally thought that these seemed a little bland and mushy (and not really like a crab cake!) However, my husband really enjoyed them, and the recipe is now a staple in a good friend's kitchen. Make the patties thinner to avoid excess "mushiness". We enjoy making small dollar-sized cakes to use as appetizers!
