Caramel Bars

Very good, very easy. The most involved step in unwrapping caramels, and the rest is simple and quick! Very yummy...especially after they have totally cooled. I made them in an 8x8 pan, which made a nice, thick bar. Seems like a 13x9 pan would make them much too thin. I added about a half cup of coconut to the crumble mixture - excellent!! I've already made them again. They disappear VERY quickly!

Oatmeal Raisin Toffee Cookies

Hmm, I wasn't quite as excited about these as others, but they are good cookies. I made just as directed, and used parchment paper on my pan. Even though I generally like my cookies a little underbaked, I still found that I needed to bake these much longer than stated on the recipe. They flattened more than I would have liked, and were a little difficult to get off of the sheet in one piece. Like others have said, you don't really encounter actual toffee bits in the cookies - they sort of just melt into the cookie and add an extra sweetness. Maybe I'm used to using quick oats in cookies, but the rolled oats almost added too much of a raw, nutty flavor for my taste - at least for a cookie. I might make these again, but I'll still be trying other oatmeal raisin recipes too.

Rick's Special Buttercream Frosting

For decorating purposes, this was great - relatively smooth and shiny, held up well, looked great for a few days. But, it was just lacking in taste. I don't think that anything with that much shortening is going to be all that tasty. I guess you just can't have the best of both worlds! If you're looking for a nice decorating frosting that tastes okay too, this will definitely work for you!

Zucchini-Coconut Cookie Bars

Four stars instead of five for two reasons: These are definitely not "cookie bars"...it's cake. Second, I didn't necessarily care for the dried fruit...it wasn't bad, just not my favorite addition. I'm absolutely making it again, but next time I'm dropping the raisins and dates, baking it in cake pans, and trying it topped with some sort of coconut pecan-type icing. I think that would be out of this world! All in all, if you're a fan of zucchini bread/cake, this is definitely worth trying! (By the way, I made a half batch in a square pan, and 30 minutes was a perfect baking time.)

Oriental Pork Chops

My husband loved these, while I just thought they were good. I think that I might need to allow them to marinate a little longer to really get the flavor in there (they sat for about 5 hours). The flavor was good, I just wanted to taste it a little more in the meat. I'll try again, maybe marinating overnight next time!

Brown Sugar Brownies

My husband requested the "Butterscotch Brownies" he remembered from years ago. I had never heard of them, but found many recipes for them here, including this great recipe. These were excellent, in my opinion. My ideal dessert - I ate half the pan in a blink of the eye! If you don't care for sweet, rich, heavy treats, these may not be for you. Kind of taste like a buttery, dense and chewy chocolate chip cookie minus the chocolate chips. I had to put my baby to sleep, so I set the timer for 25 minutes and had my husband take them out. Had I been there to check them, I would have baked them a bit longer...although I generally like things not-quite-baked-enough, these are rich and chewy enough that underbaking isn't necessary to acheive that texture. A must try!

Big, soft, good texture and appearance, but missing a little taste. For the second batch, I added 3/4 tsp. salt. Keep for 2-3 days.

Cake Mix Cookies VII

Better with 1/3 c. oil. I had to bake mine much longer, and I like chewy/not so baked cookies. The edges were very flat and darkened faster, but the rest of the cookie looked great. There are so many combinations!

Chocolate Peanut Butter Squares

If Reese's cups is what you're going for, this is very close for being homemade. HOWEVER, if you are a true Reese's cup fanatic, like my husband, I don't think it's really possible to every totally replicate them! I made bars and mini cups with a mini muffin pan and regular mini liners. If you're going to try making the cups, I'd suggest using foil cup liners...I just used single paper liners, and they became SO oily/greasy! Very cute in the end, though.

Pumpkin Dessert

Hmmm...I was SO excited to make this after reading the reviews, but was disappointed with the end result. Seemed too "pumkin pie spicy" to me! I used the Allrecipes recipe for Pumpkin Pie Spice. Was that the problem? Anyway, probably won't make again - sorry! If you're trying to feed a crowd, the recipe makes quite a bit.

Mushroom Chicken Piccata

My husband and I both thought this was excellent, plus we loved the fact that the sauce wasn't full of butter. I cooked the chicken thoroughly in the pan, removed it, then made the sauce...I didn't simmer them together as I think it would have made the breading very mushy. We can't wait to have it again! *UPDATE: As much as we liked the original recipe, we LOVE this version: Skip the whole chicken process and go straight to cooking the veggies and sauce. After sauce has thickened, toss in a green vegetable (we use broccoli florets, snap peas or asparagus), then a bunch of peeled, raw shrimp. The shrimp only need a few minutes to cook, and this will keep your green veggie from getting mushy. Serve over pasta - YUM!

Coconut Bread I

The taste was coconut heaven, but there was one problem - although the inside was "just baked" super moist, the outside was almost overbaked and kind of dry. Hmmm, I'll still make it again!

Playgroup Granola Bars

Very tasty, but more like muffin/cookie bars than the typical chewy granola bar. After a few days they did become a little more chewy. I'll definitely them make again, but will probably change a few things to make them a bit more healthy. Makes a large batch!
