Truck-Stop Buttermilk Pancakes

**Update: I had been thinking about these pancakes ever since I made them last weekend, but I didn't have enough buttermilk to make more. I finally broke down this morning and tried them using half buttermilk-half milk/vinegar. Although the texture and appearance was the same as the original, I just didn't think that the taste compared! I also don't care for these after they've been frozen, so I'll have to scale the recipe way back to make only what we need. I love freezing the Pumpkin Pancakes recipe from this site, but it seemed like the taste of these pancakes changed after freezing!** I was looking for a pancake recipe that would make me think I was spending my morning at Cracker Barrel. My husband says that they don't necessarily taste like Cracker Barrel's (although I think they're pretty close!), but he did say that they are definitely five star! I really think that using buttermilk is the key (not a substitute). We'll definitely be making these again! Oh- I only made a third of the recipe, and it made at least 15 5-inch pancakes!

Caramelized Apple Rings

Extremely easy and quite tasty, but way too sweet for a side dish! If I ever made this again, I would either reduce the brown sugar or serve it as a dessert. I used Granny Smiths, and they worked well.

Honey Crunch Pecan Pie

Really nice appearance, good taste and it served beautifully - but quite frankly I prefer the taste and ease of preparation of a classic pecan pie. I personally thought that the recipe called for an excessive amount of pecans - one cup was plenty. Thanks!

Sweet Potato Oranges

Three stars for creativity and presentation, but the orange flavor was overpowering and they were just a little too sweet for a side dish. Unfortunately, I probably won't be making these again - perhaps something similar looking, but with a little less sugar and without the orange peel.

Asian Orange Chicken

We really enjoyed this dish - it's a very tasty and healthy alternative to Chinese take-out! I took into consideration some of the suggestions listed previously: Added a touch of sesame oil to the olive oil, kept the cooked chicken warm in a 200 oven and didn't add it to the sauce until the end to keep it crispy. Also, I added slightly less cornstarch, although I found that the 2 tsp. suggested by others wasn't quite enough. At the very end, I added some cooked broccoli, which livened it up and made it a meal. It's a little extra work over other recipes, but not hard at all. We'll definitely be making this dish again!

Iced Pumpkin Cookies

I did make a number of small changes, but have no doubt that the original recipe was just as yummy! We really enjoyed these, and they kept well for a couple of days before losing their freshness a bit. As far as changes, I halved the nutmeg and cloves (really don't care for too much spice), and I really felt like it was still plenty fall-spicy. I cut the white sugar to one cup, and added 1/2 c. brown sugar. I also added a little cinnamon to the icing as other reviewers suggested, which looked nice. I drizzled the icing over the cookies, then dipped a few so that the entire top was covered. In my opinion, you really only need to drizzle it - the cookies are great alone, and the drizzling adds a nice sweet touch. The ones that were covered were almost too sweet. Also, you really only need a half batch of icing. I had tons left! Lastly, I used a cookie scoop to drop balls of dough onto the sheets, and didn't flatten them at all. They definitely flattened a bit from their ball shape in the oven, and turned out beautifully. I guess everyone's experiences are different! Great recipe, can't wait to make them again!

Seminary Muffins

My husband and I enjoyed these, and I ususally don't care for baked banana taste. Very easy, I like the addition of the oats. I omitted the chocolate chips, and reduced the salt to 1/2 tsp. Turned out to be very attractive too!

Walnut Apple Bundt Cake

I couldn't decide whether to give this cake 3 or 4 stars, but my issues were just personal preferences so I went with 4! It made a nice looking cake, but I was hoping for a more moist cake after going to the trouble of shredding the apples. Seems a little dry to me. Also, the amount of nutmeg is a little overpowering - but just my opinion! While I'm glad I tried it, I think I'll try a different recipe next time.

Artichoke Mashed Potatoes

These were an interesting change for tired old mashed potatoes, and would make a great side with so many dishes. The artichokes add a unique *something*, and I think that it would be difficult for anyone to put their finger on it! We had a ton left over, so I used them to replace the mashed baked potatoes in a baked potato soup recipe -- we LOVED that! Can't wait to try these recipes out on others in the family.

Apple Squares

These were a very yummy treat, but with a few changes, they could be 5 star! I made the recipe exactly as stated. They really are PLENTY sweet without even adding the sugar topping. I added it, but it just seemed to kind of bake into the top of the bars - no real topping. Next time I will definitely totally leave off the sugar topping, and probably even drop the white sugar in the bars down to 1/4 cup. The spice and apple tastes are so delicious, you really don't need all of the excess sweetness. The only other change I would make is to increase the apple amount, and be sure to chop them into very small pieces so that you don't end up with sort of mushy big chunks in your finished product. Overall, a tasty recipe to try, and a great addition (with changes!) to my collection - Thanks!

Freak'n Good Ribs

The bottom line is that these ribs are good in their marinade, BUT unless you use a really good barbecue sauce, none of it really matters! It's kind of hard to rate it given that it just says to use a bottle of barbecue sauce. We love "A Very Popular BBQ Sauce" from this site, but can imagine how some other bottled sauces would not taste great with these ribs!

Pat's Baked Beans

Just made these this weekend, and my family liked them just fine - but we still had some issues with the original recipe. First, it's a lot of molasses. Like someone else commented, if you don't really enjoy molasses, perhaps skip this recipe. I cut the molasses in half, and added a bit more brown sugar. My other issue was that the beans didn't really seem to cook enough during the 1-hour cooking time - they still seemed fairly firm. If I try these again, I'll definitely use the slow cooker method tried by others. We thought the chick peas fit in just fine! This recipe was fine as written, just not one of my favorites!

Refried Beans Without the Refry

I was a little suspicious of this recipe since there's no actual "refrying" of the beans (certain dishes shouldn't taste TOO healthy!) BUT, we thought that this was great, although it didn't necessarily look that great! Very tasty...I was happy to just eat the beans as is when they first finished cooking. We only cooked them for about 5 hours for lack of time, but they seemed to turn out just fine. Looking forward to making this recipe again with a few tiny changes to hopefully achieve a better-looking result!

Taqueria Style Tacos - Carne Asada

Five stars for the marinade - we didn't use the relish or salsa recipes. My husband really enjoyed this, and we're looking forward to trying it again and again and varying different ingredients to best suite our tastes. Really great as is, though! Oh - my husband grilled our flank steak, and it was perfect...I think that we'll stick with grilling it.

Soft Oatmeal Cookies

Makes an excellent oatmeal raisin cookie! I think that my search is over - I'll happily make these again and again. Note: I remove my cookies from the oven the second that they look just baked enough, and even I had to bake these much longer than the 8-10 minutes stated.

Sun-Dried Tomato Basil Orzo

I love the idea of it, but I thought it was kind of bland and boring. I noticed another reviewer cut the amount of pasta in half -- I'll it again with this change. I was so excited when making it because all of the flavors seemed like they would taste incredible mixed, but there way just too much pasta to even catch any flavor! I'll try to update my review if the modifications work!
