I'm a single mom of three who loves to cook but just doesn't have lots of time to spend in the kitchen. I love trying new recipes and tweaking them to my family's taste.
My favorite things to cook
My favorite time of year is fall, and my favorite things to cook are soups and stews. There's just nothing like the comfort of a really great soup on a cold night.
My cooking triumphs
I cook for a crowd every Wednesday night at our church. Hawaiian Haystacks is probably the most popular meal we make, but we get great feedback almost every week!
My cooking tragedies
I once mistakenly used baking powder instead of cornstarch in a sauce. Suffice it to say that they are NOT interchangeable! :)

Chewy Chocolate Chip Oatmeal Cookies
A pretty good oatmeal cookie as written. Much better with the modifications mentioned by most reviewers.

Chicken Pot Pie IX
Really, really yummy! I made some modifications based on the reviews. I boiled the veggies in chicken broth instead of the water, doubled the sauce and replaced the celery seed with garlic. I used frozen mixed veggies instead of the carrots and peas and added one chopped potato. I also used Grands Flaky biscuits instead of the pie crust since that's what I had on hand. They worked well, but next time I'll try the pie crust. Kids gave this one a big thumbs up!

Spicy Slow Cooker Black Bean Soup
Great recipe. Didn't change a thing. It was a little spicy for my teens, but adding a little sour cream and cheese took away some of the bite of the jalapeno. Served it with a sourdough French baguette (kind of like at Panera Bread). Delicious!
