Super-Simple, Super-Spicy Mongolian Beef

Reviewed: Nov. 8, 2013
I've tried a few other Mongolian Beef recipes, but this is the best one so far! I used sirloin steak and reduced the garlic and definitely decreased the red pepper. I only used 1/2 tsp and it was perfect. This was so good and even got the approval of my wife! I will definitely be making this again!

Award Winning Chili Con Carne

Reviewed: Nov. 8, 2013
I made this for the first time the other night. It was so good. Added 2 small very finely chopped carrots and celery sticks (as long as they are very finely chopped it's an amazing addition) and now and again I add a bit of squash. Also add a can of corn to the mix, bay leaf and cumin. Left out the flour etc, just boiled a bit more to evaporate extra moisture. Really good this!

Easy Homemade Pastrami

Reviewed: Nov. 8, 2013
I made this yesterday and it turned out great. I had a 2.5 lb brisket, soaked it in the brine 8 hrs, cooked it for 3 1/2 hrs then wrapped it tightly in foil and refrigerated immediately. I let it set in the fridge overnight to "rest" before I sliced it. Wasn't dry at all and sure beats paying $11.99 lb. at the store! Everyone loves it and it is so fragrant! http://www.juiceblendz.com/

Baked Salmon II

Reviewed: Nov. 1, 2013
This is great for when it's too cold outside to fire up the grill. I make this a bunch and it's evolved slightly. The first time I made it, the only thing I changed was to marinate the salmon in the foil packets to begin with, and they came out wonderful and very flavorful. Now, I marinate in the foil, don't use any oil at all except to sprits the foil with to make it non-stick, and use slices of lemon instead of juice set on top. I put the packets together in the morning, let them sit all day and then bake and they taste wonderful. I usually serve with asparagus, yellow squash, and salad for a great and relatively healthy meal! Thanks!

Chocolate Marshmallow Frosting

Reviewed: Nov. 1, 2013
This cake was very tasty! I made it for my mother's birthday and everyone loved it. I am glad that I read previous reviews about the baking time because I checked mine after about 26 minutes and it was done. I also really liked the marshmallow frosting, the flavor was great. I didn’t pay attention to what I was doing and added the vanilla before beating the eggs, so my frosting wasn't fluffy, but it still had good flavor.

Quinoa and Black Beans

Reviewed: Oct. 30, 2013
This is an excellent recipe. I am a die-hard fan of Mexican food so this was a fabulous alternative. I made a double recipe of this tonight. I used tomatoes, instead of using a separate can of green chilies. It took a little while longer to cook, but it was great. I'm sure the leftovers will reheat well, and this should freeze well, too. My family is going to go on Whole Living's Action Plan next week, so I'm trying out a few new recipes beforehand. Your website is great!

Hot Chocolate

Reviewed: Oct. 23, 2013
This is a great recipe! I used only milk, no water so really creamy. I made one cup as my family turned up their noses at the ingredients. Guess what, after a taste I was making three more cups so I could finish my own, thanks!

Easy Mexican Hot Chocolate

Reviewed: Oct. 23, 2013
This is a very yummy hot chocolate!! Added a box chocolate pudding mix per half batch and used rounded measurements on the NesQuick and creamer. Very delicious and easy to make! I think I will try with vanilla or hazelnut creamer next time for a twist on a classic. Thanks for this recipe!

White-Hot Hot Chocolate

Reviewed: Oct. 23, 2013
I love this recipe! I like the chocolate flavor but it could be a bit thicker; I added some caramel I made earlier today by putting sweetened condensed milk in boiling water for 2 hours. I could barely taste the caramel. Overall I think you could take out the half cup of milk and add 1/2 cup of cream.

Hot Chocolate Mix II

Reviewed: Oct. 23, 2013
I tried this recipe, and I doubled the amount of sugar, thinking that 3tsp for 4 cups was too little. I used a non-premium brand of chocolate. Either because of the chocolate, or my messing with the recipe, it was too sweet! So for those tempted to up the sugar level, don’t! A wonderful drink!

Ninety Minute Cinnamon Rolls

Reviewed: Oct. 22, 2013
Homemade cinnamon rolls are always so much better than store-bought. These worked great! Everyone loved them. I made them a second time adding mixed dried fruit to the dough and that was good too, but with the icing it was possibly just a little sweet for breakfast. Next time I might just try finishing them with a thin jam glaze or some sifted icing sugar.

Chicken Fried Chicken

Reviewed: Oct. 22, 2013
I just made this for dinner tonight! This was so easy to make. The most time consuming part is slicing the onion / removing fat from the chicken. Use the best quality balsamic you can find. Next time, I'll use a better quality balsamic (the dish was a tad tangy, but I like tart, so it wasn't an issue for me), mix the balsamic, tomatoes & spices together before adding to the skillet (the spices tend to clump together otherwise) and add fresh minced garlic to the skillet as the breasts simmer. This dish goes particularly well with garlic mashed potatoes and green beans, although, I think I'll try it with seasoned rice (i.e. chicken flavor) & steamed asparagus or broccoli next time to change things up a bit.

Fried Rice Restaurant Style

Reviewed: Oct. 8, 2013
I only followed this recipe loosely, omitting bean sprouts, regular onions, and a few other things. I basically only had diced carrots, green onions, egg, rice, soy sauce & sesame oil. I added much more soy sauce & sesame oil (equal parts) to the rice & it tasted fantastic. My friend loved this & asked me to make again with chicken in it next time & served with eggrolls. Really easy recipe & better than most Chinese restaurants for sure!

Stuffed Cabbage Rolls

Reviewed: Oct. 7, 2013
This recipe is a very good take on a classic and filling family dish. I followed the recipe exactly. The family all enjoyed the rolls and the unique sauce but still thought the stuffing needed some extra spice to it. Leftovers were excellent! A very useful tip: A very simple way to prepare the cabbage leaves for this recipe, or any other recipe which requires the leaves to be used as a wrap is to freeze the head of cabbage whole - it's like a frozen bowling ball! Then thaw the cabbage completely - it takes 1-2 days. Core the cabbage. The leaves pull away very easily without all the fuss and bother of the cumbersome boiling, cooling and sorting of cabbage leaves in the traditional method described. This method will reduce your prep time and effort considerably, minimize clean up time, and make the stuffing job a real breeze. You will never go back to the traditional method once you try this freezing technique. Try it yourself!

Bacon Wrapped Stuffed Mushrooms

Reviewed: Oct. 4, 2013
This is a great recipe that I use all the time but, the mushrooms are always best if you marinate them in some sort of marinade. I prefer to use Italian salad dressing. Let them soak in this for at least 4 hours before cooking. These can also be cooked on the BBQ grill. I also always use 1/2 strip of bacon per mushroom.

Beef Enchiladas II

Reviewed: Oct. 2, 2013
I made this tonight for dinner and it was gorgeous! I changed it a bit, because I don't like olives, added extra garlic and a carrot, some extra chili and dried herbs also didn't have rosemary so I used basil. So I sort of changed it a fair bit really! But it was lovely and I will be doing it again for sure!

Beef Stew VI

Reviewed: Oct. 2, 2013
Nice and easy recipe! However I did make it my own by adding a finely chopped jalapeño and 4-5 cloves of minced garlic with the onion, beef and liquids to make sure I got full flavor. I also added mixed frozen veggies (peas, corn, green beans & carrots) instead if just peas in the end in addition to the fresh potatoes and carrots. I love color in my food, especially greens. My additions were perfect!

Oven Roasted Potatoes

Reviewed: Oct. 1, 2013
This is a great, healthy and easy recipe. I do find that red potatoes are best. I sprinkle some paprika over the potatoes too. It doesn’t alter the taste but it looks good. Also, if you don’t have fresh garlic, garlic powder will do

Roasted New Red Potatoes

Reviewed: Oct. 1, 2013
Simple and delicious dish! I tried this recipe about few days ago. It was a huge hit with my family. I did have to add a few sprinkles of salt to the top after I took them out of the oven, though. I tried this recipe again today, but I modified it a little. I put the parsley in before I put it in the oven and I added a pinch of onion powder and a few dashes of Parmesan cheese. They came out delicious!

Pork Marsala

Reviewed: Sep. 27, 2013
My family just loved this dish. I did make a few changes. Instead of dredging in flour, I dipped in egg whites and breaded in Italian flavored bread crumbs with a little added parmesan cheese. I also added a splash of sherry to the mushrooms while they were cooking and added a little more marsala than the recipe called for. I was afraid the sherry and the marsala would be too much but the flavors worked well together. I will definitely make this again.
