About this Cook
I joined this site in hopes that I could find healthy, easy to make, recipes that will make it a pleasure for my husband and I to eat. I have this knack of throwing together vegetables and chicken to creat dishes that my husband has quite affectiontely named "slop". He likes them well enough, but man are they boring (to cook and to eat). So I'm hoping that by participating on this site, I can start enjoying cooking again and I can maybe get ideas to create some dishes of my own.

New Mexican; Middle Eastern; Italian.
My favorite family cooking traditions
Grandma making exactly what I wanted fro breakfast when visitng when I was a kid: Bacon and sunny side up eggs, toast, and orange juice. She is the ONLY person I know that could cook sunny side up eggs with perfectly cooked whites and still runny yolks, without flipping them over or breaking a yolk. Also, Mom's lasagna on Christmas Eve.
My cooking triumphs
I make a mean batch of very authentic tasting chicken enchiladas complete with home roasted green chili sauce. Extremely time consuming, but deceptivly easy.
My cooking tragedies
Can I just say that I HATE the crock pot. Probably the only person on the planet to say that, but nothing ever comes out right. And then I always feel like I'm cheating. Kind of hard to get a tough roast in a crock pot.

Vegan Basic Vanilla Cake
Non-vegan and vegan alike appreciated this cake. In fact some went back for seconds. Because I didn't have regular white sugar or soy milk, I used (one for one) coconut palm sugar and coconut milk instead. Cake was a golden brown because of it, but very tasty and super moist. And looked like a nicely moist cake. I frosted it with 2-ingredient chocolate fudge frosting I found on Oh She Glows and it was fantastic!

Molasses Sugar Cookies
Excellent. Made per the recipe and they came out wonderfully. My oven is a little off so they needed to be in for 13 minutes. But they were just the right combination of chewy and crunchy. Kind of like a spiced snickerdoodle.

Delicious Ham and Potato Soup
Quick and very easy to make. My husband and I loved it even though we both found it a bit salty, but not so that it ruined the soup. I will definately make it again, but will probably omit the additional salt. A keeper.
