Roasted Red Bell Pepper Soup

I made this as directed except used veg. broth instead of chicken. I usually love using beans as the "cream" in soups, but they overpowered mine. Maybe next time use at least double the peppers? I added a container of greek yogurt and that helped a bit, but still very beany. Not bad, just not the red pepper soup I was looking for.

Garlic Feta Dip

Fresh Asparagus Soup

Absolutely wonderful!!! I added some garlic powder and a little extra vegetable broth. I also used my imersion blender, which made it very easy. One of my favorites. I'll definitely be making this again and will likely try it with other veggies.

Italian Sausage Soup

I made some significant changes, so I can't comment too much, but it's a great base to work with. I made it vegetarian by using veggie broth and veggie italian sausages. It was great. I also added a can of green beans, a can of tomato sauce, extra broth and some additional italian seasoning. Thanks for sharing!

Simple Cauliflower Soup

I thought that this was a simple and healthy quick soup. I followed the directions exactly. I thought it was a little bland so I added some italian seasoning and hot sauce. I also added a little cheddar cheese at the end. I will definitely make it again.

Asian Coleslaw

This was absolutely delicious and very easy to make. I went the easy route and bought bagged cabbage/slaw mixes. The sauce was delicious and would probably be good on an aisian noodle dish. Thanks for the great recipe!

Italian Zucchini Saute

I thought this was great. I didn't really measure things out, but the combination of zucchini, onion, tomato and italian seasoning was wonderful. I even added some parmesean cheese before serving. I will definitey make this again! Thanks for sharing.

Oriental Cold Noodle Salad

I loved this super easy dish. I ended up adding a little more garlic, sesame oil and we used tamari sauce instead of soy. I let it sit in the fridge for several hours and kept adding the sesame and tamari to taste. As is, it tasted a bit too much like lime. Thanks for the great salad. I will be making it very often!!!

Sesame Parmesan Zucchini

This was a great recipe. It might have been a little too oily so next time i will cut down on at least the olive oil. I loved teh sesame and parmesean combination. I will definitely be making this one again!!!

Andrea's Pasta Fagioli

What a wonderfully easy and healthy recipe. I was looking for a quick soup for last night and this did it. While it has to simmer for a while, the prep time is very quick. We left out the pasta because i didn't think it was needed. We had fancy grilled cheese sandwiches with fontina, tomato and green onion on a hearty asiago bread along with the soup. Great dinner! Thanks for the recipe!

Mexican Rice II

This was a great recipe. I am not a good cook and was able to make this without any trouble at all. I added a little more cumin than called for, but otherwise followed the directions exactly. I'll never buy the packaged stuff again. Thanks for sharing!

California Grilled Veggie Sandwich

This is fantastic. I make it all the time, summer and winter. My husband loves to grill and as a vegetarian it gets a little boring. This sandwich is one of my favorites and is loved by everyone who has tried it. We have this great flavored focaccia bread at our grocery store that tastes great with the rest of the ingredients.
