Mushroom Pork Chops

These were really good and really easy. I put season salt and garlic powder on the chops and sauteed them in butter and olive oil. Definitely a make again.

Buffalo Chicken Rolls

This was really easy and the chicken turned out very tender. I cooked it for another 5-6 minutes uncovered though instead of using the broiler and I melted more provolone on top. Next time I think I'll use blue cheese though to give it more bite!

Mrs. Sigg's Peanut Butter Cookies

These are SO good. I followed the recipe exactly and they turned out great. They were so moist and chewy. I've always had trouble with pb cookies ending up crumbly. These were winners.

Award Winning Soft Chocolate Chip Cookies

I liked the texture of these cookies but thought they were very bland (I doubled the vanilla and added 2 tsp of salt too). I would have thought the packs of pudding mix would have added more flavor. Good but not the best.

Cheesy Chicken and Rice Casserole

This was really good. I added used a can of cheddar cheese soup and a can of cream of mushroom. I also added 2 cups of chopped broccoli and a cup of chopped onion. It turned out well. I crumbed ritz crackers over the top instead of using the bread and sprinkled them with cheese 10 minutes before taking it out for the oven. I poached the chicken in chicken broth with lots of spices and garlic. This was really easy.

Blackened Chicken

Excellent! I'll make this again for sure (despite the smokey kitchen it was worth it). I used peanut oil and heated it for 2-3 minutes instead of 15. The chicken still got a wonderful deep color even without heating the oil longer. I doubled the amount of seasoning rub and put it on both sides. I also pounded the breasts thinner and baking them for 6 minutes resulted in perfect chicken!

Garlic Chicken

I made this into a chicken strip version. They were excellent-- crisp on the outside with lots of flavor. The only change I made was adding a bit of pepper and using italian spiced bread crumbs.

Easy Herb Roasted Turkey

I'd never made a turkey before-- I had always been intimidated. I cut the olive oil to 1/2 cup and kneaded in some softened butter after rubbing the outside of the bird. I put the buttery rub under the skin. It smelled SO good. Everyone was impressed.

Hash Brown and Pork Chop Casserole

This was pretty good. I fried the chops with a lot of worchestshire sauce, garlic, and the onions. After the chops were done, I cooked the hashbrowns a bit in the same pan. I mixed the cheese in with the potatoes, nestled the chops in instead of putting them on top, and baked them at 350 for 1.5 hours. I put more cheese on top 20 minutes before they were done. Very good.
