About this Cook
I'm a homeschool mom of 9 children, and soon to be grandma. I grew up in a family of awesome cooks, and I love passing those same skills onto my children.
My favorite things to cook
Meatloaf, garlic mashed potatoes, butterhorns, baking any kind of bread, soups, cookies, oies, and basically anything with cheese.
My favorite family cooking traditions
Prime rib, lefse, and maize at Christmas, my birthday carrot cake, raspberry custard kuchen, hot beefs, and potluck beans out camping; blue cheese burgers on the canoe trip, pasties for snowmobiling, garlic mashies at Thanksgiving, autumn apple crisp, and too many others!
My cooking triumphs
I love creating my own recipes, especially when they are requested over and over by the people I care about. Some of my best personal recipes (though simple) would be Lazy Mom's French Toast, my homemade butterhorns, and cooking all of the food for my two daughters' weddings, and my oldest son's birthday concoction...chocolate disgust.
My cooking tragedies
Ugh...never mention orange pork chops to my husband. The traditional German meal I made for the family wasn't a real hit, either...I loved it, but I was the only one!

Banana Banana Bread
Nice basic recipe. It uses more banana and less sugar/fat which is nice. I substituted coconut oil for the butter, and added some chopped walnuts. I would add a bit more salt next time since I did not use butter. I think I'd add some vanilla and spices for extra flavor in the future. My kids loved it.

Michael's Foccacia Bread
Very quick and easy. I used 2 T. dried onion and garlic salt blend in place of the salt in the bread because I was pressed for time. I only had Italian seasoning blend and used that on top with the olive oil and parmesan. Simply delicious served with a plate of olive oil with a balsamic reduction swirled in and fresh herbs sprinkled on top.

O'Brian's Potato Casserole
We liked this, but it was literally swimming in butter when the recipe was doubled. I think in the future I'll leave out the butter in the casserole part completely, and use half as much for the cornflake topping. Other than that, it's something I would make again.
