Chipotle Crusted Pork Tenderloin

so good and so easy! i've made this 3 times now. i use canned chipotle peppers in adobo sauce. I smash about 3 of them up in a ziploc bag and add it to the "rub".

Mexican Bean Salad

excellent salad. aside from the cilantro, which can turn wilted in 24 hrs, this salad will keep for 2-3 days, if it lasts that long! i eat the leftovers in tortillas for lunch!

Soft Peanut Butter Cookies

Pretty good cookies, though I added 2/3 cu choc chips, and I thought that the cookies needed the added sweetness/ texture of the chocolate. These were not done in 7-10 min- I had to cook them for 12min.

Roquefort Pear Salad

Yes- it's an excellent salad. I found that 1/4c sugar was enough to coat nearly a whole cup of pecans, which is fine since you can store them and use them for another salad later (this is probably the most time-consuming step anyway). I omitted green onions.

Cranberry Pistachio Biscotti

I read other reviews that suggest modifications. I would maybe decrease the pistachios to 1cup, but otherwise it's great. Don't chop the pistachios, otherwise you won't get the beautiful cross sections, and for those who had crumbling while cutting, you probably didn't cool for the exact 10min (set your oven timer because the right amount of time makes a difference!).
