Bubba's Jambalaya

I followed the recipe as is (although I added some garlic) and it was great. I used a parboiled rice that is firmer and has more substance than normal white rice and it had a great consistency. I'll definitely make this again.

Hot Bean Dip

I've made this several times and I like to use pureed black beans. I think they have so much more flavor than plain refried beans. I also use the whole package of taco seasoning (if not more) and throw in some cumin. It's always a hit!

White Chili I

I've been making this for several years now. I use cooked and chopped or shredded chicken and usually add 4 cans of beans (slightly drained). If I can make it a day ahead, I do, but it is still good the day of. Served with cornbread, this is truly a quick and delicious meal.

Scrumptious Beef and Potato Casserole

I have made this several times and it is always a hit with the family. I use ground meat and omit the cereal topping. I also cook the sliced potatoes a little bit in the microwave to cut down on cooking time. This is great comfort food.

Flourless Chocolate Cake II

I made this last night and it was wonderful! I also did not use the cocoa powder, but used half semi-sweet and half dark chocolate blocks. I used a drizzle of dark chocolate pieces melted into a little heavy whipping cream and then topped with whipped cream. It was exactly what I was craving.

Fish Tacos

I was so happy to find this recipe because it tastes just like the wonderful fish tacos we have when we visit San Diego. I usually just buy beer battered cod and deep fry them instead of making my own batter. I have baked the fish but deep frying is so much better. I use sour cream instead of the yogurt and leave out the capers and adjust the cayenne pepper for my kids sake. Just make sure to have fresh lime wedges to squeeze over each taco right before you eat it and it is complete perfection!

Chicken Breasts Stuffed with Perfection

I have made this several times and my whole family loves it! I skip the marinade and just season the pounded chicken with Italian spices. I use frozen spinach and a sun-dried tomato basil pesto that is yummy. I just mix the filling in one bowl with no cooking and this makes it fast and easy. For the bread crumbs, I use a ready made herb stuffing mix and put a few pats of butter on top.

Irish Beef Stew

My family loves this recipe. I've found that some rosemary garlic seasoning really pulls it all together and gives it a great flavor. The only other change I make is slow cooking it on the stove. It makes the whole house smell great on a cold winter's day.

The Best Meatloaf

This was a really good meaty meatloaf. It had a great consistency and held together well. I used stuffing mix instead of the bread crumbs and omitted the onion and green peppers (my kids don't like them if they can see them). I also added some garlic powder and some pepper jack cheese and mixed ketchup and a little brown sugar with the steak sauce for the topping. We will be making this one again.
