Homemade Deviled Ham Sandwiches

OK - so bear with me; as a child, I LOVED the Underwood Deviled Ham that came in a can. When I found a bit of ham in the freezer today that I needed to use, I searched for a deviled ham recipe. This is the one I used - didn't change a thing. THIS IS A KEEPER! As tasty, to my adult palate, as the canned deviled ham was to me when I was a girl.

Idaho Finger Steaks

Pleasantly surprised to learn that the finger steak originated in Boise; I grew up in the Twin Falls area, and my family now lives in Boise. I do remember eating fast food finger steaks as a teenager! Tried this recipe tonight and it was ABSOLUTELY DELISH! I will make this many times in the near future. A couple of issues I had was that the batter was VERY thick, so I may use less flour (2 cups rather than 2 1/2) next time and play it by ear from there. I also left out the salt, as recommended by other reviews, but I will probably cut back on the seasoning salt as well in the future. Also realized I didn't have marjoram, so I substituted Herbs de Provence (thyme, marjoram, rosemary and savory) and this worked just fine. BOTTOM LINE: This recipe is a keeper!

Red Enchilada Sauce

Awesome recipe! So simple, with ingredients I already have. (I did find tomato sauce at my grocery store recently that is perfect for this recipe. It is Del Fuerte Tomato Sauce seasoned with Mexican spices, which only enchance the ingredients of the recipe. It comes in 7.4 oz cartons and was only $0.33 per carton.) This is a definite keeper! LOVE IT!

Microwave Oven Peanut Brittle

I used to make this in college YEARS ago! So glad to have found the recipe again! Thanks to those who included the following tips in their ratings: Spray the bowl and spatula with non-stick spray. Warm the cookie sheet in the oven on a low heat (200). This allows you to spread the mixture out a litte more for a thinner brittle. Awesome recipe and hints. Great gift! Blessings to all!
