This recipe is the perfect banana crumb muffin! Based on other reviews, I made slight modifications to enhance the flavor even more. I used vegetable oil instead of butter in the batter (even swap), but next time I'll use apple sauce instead. I also added 1 tsp vanilla and 3/4 tsp cinnamon to the batter. I made double the crumbs, because...well, everyone loves crumbs! I brought this into work for a potluck party so I made it as a crumb cake in a pyrex instead of as muffins. It worked great, I just had to add time to the baking process. It took around 40 minutes total to cook through, but it tasted exactly like the muffins I had previously made. These are wonderful! You'll love them!
