Baked Kale Chips

Reviewed: May 29, 2012
I used olive oil spray, and some garlic/parmesan seasoning I had. Delicious! Baked per instructions and they came out perfect!

Pumpkin Black Bean Soup

Reviewed: Oct. 31, 2011
I thought this was really good, but wish I had stopped at 2 cans of beans. I think the 3rd can obscured the pumpkin flavor a little too much. I used some venison sausage instead of ham, omitted the vinegar, and added a little chili powder and allspice. My husband loved it!

Spiced Bacon Twists

Reviewed: Oct. 23, 2011
I've made these several times now, and have tweaked a few things to make it easier for me. I begin by using regular cut bacon, not thick, and I cut the slab in half so I get more appetizers out of each lb of bacon. I let it come almost to room temp; I've found this makes it easier to twist. Then I put my brown sugar mix (I only use 1C brown sugar, 1 tsp Allspice, and the 1/4 tsp Cayenne) in an oblong container, long enough for the bacon slices to make coating easier. I use the same temp and time in the oven, and they come out perfect every time! I just made these for my in-laws, who loved them, and they've become my husband's favorite hunting snack!

Truffle Lovers' Popcorn

Reviewed: Apr. 23, 2011
I tried this over Orville Redenbacher's Natural Buttery Salt & Cracked Pepper popcorn, and it was sublime!! You've really got to like truffle oil for this one; this is a beautiful way to showcase that earthy flavor!

Party Punch VI

Reviewed: Apr. 26, 2009
I made this punch for a baby shower, and thought it was very good. I appreciated how easy it was to make, especially when there were so many things going on! I used Minute Maid punch, a store brand soda, and raspberry sherbet. It wasn't too sweet, which was nice since there were so many sweet desserts.

Roasted Rack of Lamb

Reviewed: Apr. 18, 2009
I needed a recipe that would assist me in cooking my 2 racks of lamb, which I've never made. I was a little apprehensive, because it isn't the cheapest meat to experiment with! I was also looking for something that would incorporate rosemary and garlic. Neither my husband or I care for mustard so I left it out, and I used panko instead of bread crumbs. I didn't measure the garlic or rosemary, I just added till it "felt right". I mainly used this recipe for the technique, and Sweet Jumpin' Jehosaphat on a Pogo Stick, did I ever get what I was looking for!! I especially appreciated the footnotes and the instruction to cover the end of the bones with foil. The result was a perfectly medium-rare rack of lamb that my husband and I both felt was better than any restaurant's rack of lamb we'd ever eaten!
