Roast Adobo Pork Loin
Beautiful, flavourful, moist. Best pork dish I have ever made, or eaten. The only changes I made were that I used Traci's Adobo Seasoning from this site, and grape seed oil. Oh, and I bbq'd it. Best ever!

Caramel Shortbread Squares
Holy moly this was good! Yes, was. The first batch was exactly according to the recipe, and was a bit flat. Bland. I made a second, and sprinkled coarse sea salt over the caramel layer once it had cooled, and it added such nice depth and layers of flavour! So good. For the second batch I sped up the cooling steps by placing the pan outside in the BBQ (it's 10 below right now). A freezer would work just as well, but mine's full.

Emily's Famous Marshmallows
Great recipe, but had to look around for better instructions before I began. I used regular Jello instead of gelatin, it worked amazingly! I omitted the vanilla, but it could have gone in and added some depth to the strawberry jello. I also used a piping bag with no tip to make pretty pink piles of marshmallow on four sugar-dusted, parchment lined cookie sheets. I will be making these again!
