Barb's Chocolate Cake

Reviewed: Apr. 11, 2006
It turned out great, I read somme other reviews and those helped out. The cake was very moist and yummy, I made it for a Birthday get-together for my husband and it was gone before it was over, one attendee had 3 pieces! Made it with chocolate buttercream icing and that gave it the perfect touch!!

Jamie's Minestrone

Reviewed: Nov. 16, 2006
This was an excellent dinner on a chilly fall night! I made it following the directions, but added some things like baby red potatoes and squash (1/2 the zuccini) I also added some mushrooms that went well with the wine. I added more chicken stock than called for, because I had more veggies. I served it with warm bread and it was a hit. This recipes will def. go in my books as a regular!

Vodka Rigatoni

Reviewed: Dec. 7, 2006
Fantastic! I love this recipe! I made this last night for my Mother-in-law for her birthday and it turned out beautifully. I omitted the peas, I don't like them too much and they weren't missed. I served it with fresh garlic bread and caesar salad, perfect dish for entertaining! Thanks for a good one!

Bill's Sausage Gravy

Reviewed: Jan. 6, 2007
These biscuits were So simple and too about 10 minutes to prep and get them in the oven! I baked mine for about 11 minutes ( my oven runs very hot!) at 425 and they came out golden brown and delicious! While they were baking, I whipped up some simple white gravy with 4 tbsp butter, 1/4 c. milk and about 1 to 2 cups milk..added some salt and pepper and it was perfect right about the time my timer was going off. Nothing like a comforting breakfast on a chilly Saturday morning! Thanks for the recipe!! It is for sure going in my permanent file!

Broiled Tilapia Parmesan

Reviewed: Jan. 12, 2007
My husband and I loved this recipe! It was wonderful with fresh tilapia and as recommended by some other cooks I added some breadcrumbs (italian) and used garlic salt instead of celery salt (didn't have any) My huby made me promise to make again regularly- he complained that I didn't make enough for him to have seconds!

Enchilada Stuffed Shells

Reviewed: Jan. 12, 2007
Love this recipe! The only complaint I have is that the shells got tough after beig in the oven for so long- probably something I did wrong, but very yummy with sour cream and extra cheese! Will be making this one again!

Mexican Chicken Corn Chowder

Reviewed: Feb. 15, 2007
it tasted just okay for me- I added yukon gold potatoes as suggested by another user and also added another can of cream corn and two cans of regular corn. I also added a can of cream of chicken soup to add some thickness to it. After dinner, I put the rest of the chowder in the refrigerator and it was 10 times better the next day reheated for lunch!

Grilled Salmon I

Reviewed: Feb. 27, 2007
okay, so I was afraid to use soy sauce, because I'm not a fan, but neither me or my hubby like salmon that much either, so I was going out on a limb to try this recipe anyway...It is FANTabulous!!! I marinaded the salmon overnight with the skin side up as recommended by other "enjoyers" of this recipe. It worked out perfectly! I'm a full time student and get home pretty late in the evening and this was so quick and easy. I served it with garlic rice and Parmesan Crusted Asparagus- delicious!! Good job and thanks so much, will be aking this again for sure!

Caribbean Coconut Chicken

Reviewed: Apr. 17, 2007
This recipe was just OK for me..I grilled the chicken on the BBQ first and then poured the sauce over top. The sauce just didn't seem to give a whole lot of flavor..but it smelled EXCELLENT..thats whey I'm giving three stars.

Cajun Chicken Lasagna

Reviewed: Aug. 25, 2007
Super easy recipe! I made it with store bought (pre-cooked) chicken, and this cut down cooking time. It was really good with a salad and bread! Thanks for the great one! EDIT:: I have made this into a pasta toss, using bowtie or penne, instead of the lasagna, and LOVE IT! I totally recomend trying it this way.

Just okay for my husband and I. It didn't taste like much of an Alfredo sauce. It did have good taste though.

Raspberry Cake

Reviewed: Aug. 25, 2007
FABULOUS! I made this with unsweetend frozen raspberries, and just added two tablespoons of sugar. I made this into 8 jumbo cupcakes, and filled them with a homemade cream made from lemon curd and whipped cream. I iced them with homemade buttercream frosting. My grandmother loved them for her 88th birthday. This sounds rich, but the lemon cream is suprisingly refreshing! Great basic recipe!

This was wonderful! I changed/added a few things as others suggested. I used white wine and heavy cream intead of water and I also used 8oz cream cheese instead of 3oz. I also added a can of diced tomatoes, with added some color to the dish. It came out great! Thanks for the recipe!

Old-Fashioned Vanilla Pudding

Reviewed: Mar. 19, 2008
This recipe was so easy and quick for my sweet tooth!! I doubled the recipe and although it sounds quirky, I added Vanilla Coffee Creamer as it was heating. It added a bit more sweetness, and a great creaminess. Thanks for the recipe, and I'm looking forward to making it again!
