Chicken Katsu

Even though I always knew the basics for this recipe (I'm half-Japanese), I've always shied away from frying foods after a particularly bad frying incident. I took my time, though, and made sure to get the oil hot enough on medium-high heat (on my stove, a 7). I then tested out the oil by sticking a chopstick in the oil and saw bubbles (great tip from another reviewer!). I took down the heat a smidge to a 6 (thanks to the suggestion of another user), and went for it! I was using a 12 inch skillet, but fried two at a time so they could have plenty of room. I went for 4 to 5 minutes on each side. Results were perfect! My family was very impressed and said it was one of the best meals I've ever made (served with white rice, Asian salad, and some mixed vegetables).

Mary's Meatloaf

Delicious and easy. I did all of my prep while the baby slept; kept it in the fridge; slathered the topping on and threw it in the oven on the way out the door to dance class (my husband stayed at home with the loaf); then walked in the house to the best smelling meal! And with two minutes to spare on the timer. The meatloaf wasn't dry at all, even though two hours seemed like a crazy amount of time. And the topping wasn't burnt to a crisp like I worried it would be (I guess because the 350 temp wasn't too high). I used four big potatoes cut into 8ths along the edges of the 9x13 glass dish, and thought they looked dry when I pulled out everything from the oven. I quickly drizzled EVOO on them and sprinkled them with salt, but actually, they really weren't dry. The bottoms of them soaked in the juices (I used a 90/10 ground beef so there were still some juices) and they were cooked perfectly. The whole family (husband, teenager, and baby) ate it up and my husband (not a food lover at all) proclaimed it was "not just okay, not just good, but actually delicious."

Di's Delicious Deluxe Deviled Eggs

Every year at Thanksgiving, I've made different kinds of deviled eggs, trying to find The One. This is it. I changed nothing except for not including celery because I didn't have any. Usually there are tons of leftover deviled eggs, but not this year. I got rave reviews, including from my father-in-law who told me to stop looking. He agreed that I had found the best recipe.

Chunky Cheesecake Brownies

So easy to make and so yummy! I microwaved the butter and chocolate together at 20 second intervals to speed things up. My father-in-law loves brownies and this was a hit for him and the rest of the family.
