Baked Tilapia

After reading the othe reviews, I made the following changes and everyone loved this dish: 1. I marinated the fish in Italian dressing for about 1 hour, 2. I used no-stick cooking spray on the pan, 3. used 1/4 cup low fat/low sodium chicken broth in the sauce instead of oil, 3. decreased the butter to about 1/4T per filet.

Chicken and Artichoke Minestrone

This soup was EXCELLENT! In order to clean out my cabinets I added extra corn, white beans, and a 6 oz can of tomato sauce.

Tzatziki Sauce

Instead of using regular yogurt, substitute Greek Yogurt (my supermarket sells "Total"). This yogurt is much thicker than regular yogurt and therefore does not need to be drained. Also, you don't really need a food processor.

Mexican Pasta

Everyone I made this for loved it. Since no one in our group was a vegan, I added some sour creme and shredded chedder to the entire batch. For the meat lovers in our group I sauted some sausage in a seperate pan and added it to half of the batch.

Boudreaux's Zydeco Stomp Gumbo

This is an excellent recipe, but I have these suggestions. 1) Reduce the chicken broth to 2.5 quarts. 2) Use 1 (14 oz) can of drained diced tomatoes plus 1 (28 oz) can of crushed tomatoes instead of the fresh roma tomatoes. 3) Use 1 lb of chicken, 1.5 lb of medium shrimp, & 1 pkg of Andouille sausage. 4) When you add the meat to the broth mixture, also add 1.5 cups of uncooked white rice.
