Sweet Potato Rolls

This is a great recipe. I used a fresh yam I baked in the oven and made two loaves of bread instead of rolls. Worked out very well!!!

Grandma's Gingersnap Cookies

I can't help but doctor recipes to suit my taste. I never use shortening so butter was substituted. I added 2/3 cup chopped candied ginger and added 1/3 cup of the sugar the candied ginger was packed in to the one cup of sugar. I baked for exactly ten minutes and the cookies were firm on the outside and soft and chewy inside and melted in your mouth. Don't skip rolling the dough in cinnamon/sugar - it adds a great flavor and gives the dull brown cookie a nice sparkle. Thank you for a great recipe I will be making for years to come.

Granny's Oatmeal Bread

Smells amazing while baking! I mix/bake bread at work all day so at home I cheat and use my Kitchen Aid mixer with dough hook for bread. I mixed it for four minutes on medium low instead of hand kneading. Left the ingredients in tact, as I always do when making a recipe for the first time. I did, however, do a third rising as I usually do with most breads. But my second batch! WOW! Wanted to experiment, so I added half a cup of raisins, 1/2 cup light brown sugar, and a tablespoon of cinnamon. Best cinnamon raisin bread I have made. Sprinkled some oats and sugar on top as well for presentation (and the sugar makes a nice crispness on top.) Thank you! Excellent bread recipe.

All-Day Apple Butter

This is delicious - very tempted to eat it right from the cooker with a spoon. I doubled the cinnamon and added two teaspoons of ground ginger. Used 24 small gala apples. Ended up cooking it for one hour without lid on high, then eight hours lid on on low, then two hours on high no lid. Used my immersion blender which I would think is very necessary if you want a smooth velvety texture.

Easy Granola Bars

I wouldn't call this healthy by any means, it is made with a whole can of straight up sugar, but it is a nice treat/dessert. I add a slightly scrambled egg to the mixture before baking. Makes the bars exceptionally moist. Cranberry/walnut/white chocolate chip has been the favorite combo.

Fast and Friendly Meatballs

Excellent! I cook these in the pot of sauce for two hours, makes them extra juicy and no added fat. I added two tablespoons of Italian seasoning and four chopped garlic cloves, I need a lot of flavor :)

Corn Fritters

Delicious and very easy. I always serve with fried fish, great side for that. I sometimes don't have any eggs, and a few times I used an easy replacement (2 Tbsp. water + 1 Tbsp. oil + 2 tsp. baking powder) and the fritters came out exactly the same as they do when I use an egg.

Traditional White Bread

I used vegetable oil in this recipe and it was fine. I used my stand mixer with dough hook for mixing and kneading. I made one plane loaf, and since this is such a great basic recipe, I made another with chopped dill and poppy seeds, and then another with extra sugar and cinnamon. So simple and such a versatile recipe.

My Best Clam Chowder

Perfection! Thanks for a great classic chowder recipe. So incredibly easy to make. I sprinkled two tablespoons of dried chives before serving, nice color and flavor. Delicious!

Easy Apple Coffee Cake

I easily could have used four or five apples, and the apples I used weren't big. I used Pink Ladies, they are delicious. Substituted pecans. Nice cake, easy, but tedious. Should have used mandolin slicer for apples.

Zesty Lemon Loaf

This is a nice basic lemon loaf recipe. The buttermilk makes it very tangy. Definitely a great starter. I wanted an easy recipe and I got it. I like a super strong lemon flavor, so I added a half cup of lemon juice straight to the batter, and to make it extra moist a package of lemon pudding/pie filling. I omitted the alcohol and I don't think it tasted like it was lacking anything. I would like to make it again using blueberries and a cream cheese icing, I think that would be great! For this amount of batter I used it to make two 8x4 loaves for 50 minutes.
