About this Cook
Latest: widowed mom of 2 now. Taking grad classes to finish my MBA. wishing I could start a catering business or a bed and breakfast lol I'm a remarried mother of 2 picky little ones, who loves to cook. I recently stopped working to focus on homelife and revamping my education. I love to cook, especially multicultural dishes, and love introducing the kids to new foods.
My favorite things to cook
ethnic food, holiday meals
My favorite family cooking traditions
holiday menus: celery and cream cheese lol tomato soup with Mac n cheese mixed in, mmm comfort food
My cooking triumphs
Taking something from leftovers and creating appetizing, healthy meals that get devoured quietly - the kids sign that they liked it. Making Asian potstickers and dip, and pad thai to bring to church, and having the Asian population complimenting the authenticity! Not to mention the habitual requests to make it again!

Creamy Bacon-Wrapped Chicken
Hubby and DS loved this. I used turkey bacon. Added mozzerella to the cream cheese. Sprinkled cheddar on top of the bacon. Next time will make it as s cordon bleu.

Peppy's Pita Bread
Great! Did everything per recipe, but "fried" in the skillet like another reviewer for a softer flat pita for my hummus craving ;)

Cheesy Zucchini Dip
This was great. I did make adjustments: a small zucchini, shredded; and about a cup of freshly grated cheddar; about 4 T mayo; about 2 T sour cream, a dash of salt, and 4 turns of freshly ground black pepper. Mixed. Stuffed celery with it. Dipped cukes in it. Spread it on my portabella burger. Used it as a thicker dressing for my salad. Dipped sweet potato fries in it. All amazing delish! It's kid approved, niece approved, and BF added it into the keeper list. Thanks for a delicious twist for my low carb diet!
