Latest: widowed mom of 2 now. Taking grad classes to finish my MBA. wishing I could start a catering business or a bed and breakfast lol I'm a remarried mother of 2 picky little ones, who loves to cook. My cooking triumphs
Taking something from leftovers and creating appetizing, healthy meals that get devoured quietly - the kids sign that they liked it. Making Asian potstickers and dip, and pad thai to bring to church, and having the Asian population complimenting the authenticity! Not to mention the habitual requests to make it again!

Cheesy Zucchini Dip
This was great. I did make adjustments: a small zucchini,shredded; and about a cup of freshly grated cheddar; about 4 T mayo; about 2 T sour cream, a dash of salt, and 4 turns of freshly ground black pepper. Mixed. Stuffed celery with it. Dipped cukes in it. Spread it on my portabella burger. Used it as a thicker dressing for my salad. Dipped sweet potato fries in it. All amazing delish! It's kid approved, niece approved, and BF added it into the keeper list. Thanks for a delicious twist for my low carb diet!

Kung Pao Chicken
I didn't find this dish that flavorful - DH and I really wanted a nice, spicy hot Kung Pao - this was totally NOT spicy at all. In fact, it was so not spicy that the kids had no problem eating it. Since it had nuts, my daughter thought it was Peanut chicken, which she loved, so every scrap disappeared. But, to DH and I, it was not very flavorful, nor spicy, and so not what we were looking for. I followed the directions exactly, but tripled the marinade and sauce - and used chopped up pork loin instead of chicken.

Donut Muffins
These were't bad. I followed the instructions without any revisions. I baked in a 12 ct mini muffin tin. It was like eating a cinnamon/sugar donut hole. Brought them to my daughter's school Christmas party; no one ate them. My picky kids liked them, and so did one of the high schoolers who sneaked some, knowing I made goodies. But, no one in the class touched them.
