Zucchini Quiche

Fast, easy recipe, would cut zucchini into smaller pieces next time. This is a complete meal with protein, veggie, some carbs and a little fat.

Zucchini and Potato Bake

This was an excellent recipe for zucchini, I just put it under the broiled for a few minutes to brown it more. Definitely will make many more times.

Connie's Zucchini "Crab" Cakes

Furthest thing from crab I ever did see. As far as the patties went they were good but can't say they reminded me of crab meat in any way. Too fussy to put together. BUT still tasty for what they were.

Rhubarb Orange Cream Pie

Absolutely one of the best rhubarb recipes. Made more than expected and had to use a larger pie dish. Exceptional flavour, interesting texture and perfect for company. Watch you don't over cook it though. Recommended time is too long.

Plum Cake

The cake itself was very very dry and even after coating the plums in brown sugar and 1/2 tsp of almond extract and serving it with ice cream, I feel this recipe was not something I would bother with again. Sorry!

Herbed Dumplings

Best recipe ever. I added 3/4 tsp garlic powder, and 3/4 tsp parsley, 3/4 tsp oregano, 1 tsp sugar. and 1 more tablespoon of butter. It's absolutely the recipe I have been looking for. Hint: if your liquid isn't hot enough when you drop them in, they will not keep their shape as well and no peeking for 15 minutes!!

Nice change from all the recipes that use tomato. Makes a nice gravy and it's fast.. I added three large potatoes quartered on the bottom, definitely a keeper.

Marinated Mushrooms II

Oh my gosh these are so good. For those of you that said it was too much vinegar you probably didn't simmer them long enough for the vinegar to simmer away. I doubled everything except the onions but I will make this next time we barbeque steak, wonderful side dish. Just happened to have mushrooms sitting in the fridge and didn't want them to spoil so I tried this recipe and am glad I did.

Vegetarian Sweet and Sour Meatballs

one of the best vegetarian meatballs recipes. Should line pan with tin foil and/or add a little more water to sauce. Also should remove meatballs right away as sauce hardens quickly.

Romaine Rice Tuna Salad

Just great! Didn't change a thing...Perfect for dietsrs, diabetics and weight watchers as it has your veggies, carbs, protein and fat. Husband suggested a touch of soya sauce instead of salt......very please. Make sure rice is warm as it absorbs the dressing better..........YES!!!

Brazilian Coffee Cookies

3/4 cup sugar total is plenty, and it definitely needs more coffee, dissolve at least 3 tablespoons instant coffee in a little hot water so it mixes in better but leave out milk then.11 minutes baked is plenty for a nice cookie. If you leave them in a ball, dip then in sugar they will crack and they are even softer.

Bite-Sized Salmon Tikka

I have cooked every kind of fish conceivable and this is absolutely the best stir fry salmon ever! Just the right about of spices and it would be great as an appetizer for a fish dinner.

Southwestern Cauliflower and Ham Soup

I eliminated that potato flakes and added a diced potato, BUT the cheese isn't a good idea, very messy, instead I would substitute Cheez Whiz instead next time....had some left over corn I added....and now it's a keeper. I also added a dash of pepper flakes....now it's a five!!!

Donut Muffins

Made the recipe exactly how it said and got 18 small ones, also 1/2 cup sugar is too much to dip them in, wasted at least 1/4 cup...taste like a cake donut hole..Used cinnamon in batter instead of nutmeg...Yep it is a keeper.
