Bacon Ranch Pasta Salad

This was just ok. My main complaint is that it was so salty!! The mix, olives, and bacon was too much I guess. I will definitely try it again, but with a few changes next time. First, I used Hidden Valley's Buttermilk Ranch dressing mix, as that's what I already had at home. Next time I'll use regular ranch mix. I will probably also cut back to two tablespoons of ranch mix. If it isn't "ranchy" enough, then I'll mix some with a little milk and add it later. It was good enough to try again, but not as tasty the first time around as I'd hoped.

Plum Buckle

Excellent plain or with vanilla ice cream! I'd recommend adding the milk one cup at a time so it doesn't splash everywhere when you mix it in. I'd also suggest not softening the butter in the topping and just cutting it into the mixed dry ingredients instead. If it's soft, then the topping is very gooey and not crumbly at all. Tastes fine either way, but it's just hard to glop the topping on the top of the batter if it's gooey.

Slow Cooker Lentil and Ham Soup

I use a 14.5 oz. can of tomato sauce instead of 8 teaspoons and two cans of broth instead of 32 ounces. It's perfect, neither too watery nor too thick. Our soup is ready to eat in 9-10 hours, so just keep an eye on yours. While the taste won't change, you don't want your lentils to overcook to the point of disintegrating.

Brunch Egg Bake

Everyone in our family loved this, including the mushroom haters. The only things I changed were to chop fresh mushrooms instead of using jarred ones, use fresh basil instead of dried, and to switch the order of ingredients in the egg mixture. I didn't want lumpy batter, so I mixed the dry ingredients, slowly whisked in the milk, then beat in the eggs.

Easy Baked Ham

The whole fam loved this one!! I've made it with a couple 2-ish pound, fully cooked turkey hams that I sliced up. I also like to use crushed or chunk pineapple instead of sliced because every slice of ham gets some pineapple with it. The liquid/sauce in the pan is great served over mashed potatoes or rice!

Spinach Lentil Soup

So good!! After reading the reviews, I made a few changes. First, I add the 2/3 cup of water and uncooked rice to the pot along with the lentils and the rest of the liquids. Second, I switch the quantities of broth and water, using 2 cups of water and 6 cups of broth. Third, I throw in 2-3 chopped cloves of garlic and a couple extra ounces of kielbasa. I know the thought of lentils and spinach would make a lot of people gag, but this is not an earthy, healthy tasting soup. It's packed with flavor and absolutely delicious!

Quinoa and Black Beans

Really tasty! I use a full can of broth, as I'd rather not have 1/2 cup to figure out a use for and substitute four cups of Refried Beans Without the Refry (from this site) for the canned ones, which adds extra flavor.

Strawberry, Kiwi, And Spinach Salad

Simple and yummy. I searched a couple stores and couldn't find raspberry vinegar, so I used Annie's Raspberry Vinaigrette. I also toasted my walnuts.

Barley Bake

I really like this! The first time I made it I jotted down the recipe on scratch paper and accidentally used 2 cups, rather than two cans, of broth. Needless to say, the barley was a little chewy. :) The second time, still not realizing the error in how much broth I was using, I used one can of broth and covered the dish with foil for the first hour of baking. Turned out great! I may just do it that way from now on, though I'm a little curious about how it would turn out with two cans of broth. I double or triple the amount of mushrooms when I make it.

Scrambled Egg Muffins

Best Bean Salad

This is like the three bean salad you find at a deli, but better! I don't use canned beans, though that's the only way I could find the wax beans. So, I used canned wax, frozen green, and dried garbanzo, kidney, and black that I'd previously cooked and frozen.

Beaker's Vegetable Barley Soup

This was not a thick soup, which was fine, though the leftovers will be thick as the barley continues to soak up liquid. I really liked it and the vegetable soup haters in our family really liked the flavor of the broth. The only changes I made were to use dried beans I'd previously cooked/frozen and to use a handful of chopped, fresh parsely instead of dried.

Breakfast Casserole III

A simple tasting, but still flavorful dish. I cook the onion & potato mixture in the sausage grease, adding additional butter as needed. It *is* pretty greasy, though, when you cut into it, despite thorough draining of everything before baking.

Olive and Feta Pasta

We double this for our family of five, which allows for some leftovers, and make the following changes - leave out the zucchini, add one jar of marinated artichoke hearts (with liquid) & one can of plain artichoke hearts (drained), use a bunch of extra olives and feta. You can also use regular, button mushrooms instead of crimini ones. This dish would be really good with sun dried tomatoes, but I haven't actually tried it that way yet.
