Coconut Cranberry Bars

Reviewed: Dec. 14, 2007
Absolutely fabulous!! I chopped the pecans, but otherwise followed the recipe exactly. Will definitely make again, perhaps toasting the nuts next time.

Slow Cooker Stuffing

Although a bit salty, the flavor was fine. We did it in the oven, as directed and there was too much liquid.

Jamie's Cranberry Spinach Salad

Delicious! Made it exactly as directed and it was great. It had a nice little kick from the vinegar. Will definitely make it again.

Indian Chapati Bread

Reviewed: Nov. 13, 2007
It was Foreign Food Night at our house and we were eating Kenyan food. Every Kenyan food list I saw listed chapati as a common food. It was my first time eating it and we all liked it. Super simple!!

Refried Beans Without the Refry

Reviewed: Nov. 13, 2007
Easy and tasty! I left the jalapeno half intact and removed it after cooking. Next time I will dice half the onion and blend it in at the end for a little extra flavor. Jumping back to say that I made these differently today and still love them. I did a double batch with half black & half pinto, one diced onion, no jalapeno ... and they're wonderful!! This is such a good recipe and an easy one to tweak.

Buttermilk Cinnamon Bread

Reviewed: Oct. 10, 2007
Oh my goodness!! This is absolutely delightful. I made it exactly as the recipe said to and it's perfect. Well, not exactly. I sprinkled the greased pan with some of the cinnamon/sugar mixture. Yummy, yummy, yummy. I'm printing this one out for my recipe file.

Classic Macaroni Salad

Reviewed: Aug. 4, 2006
I used whole wheat noodles. I also took one reviewers advice and kept my cooked noodles and my "dressing" in two separate containers overnight, so as not to have the noodles suck up too much moisture. I thought it was pretty good, but not many people at the potluck I was at actually ate it. Maybe the noodles scared them? I'll do it with regular noodles next time and see if I get a different response.

Black Bean and Couscous Salad

Reviewed: Aug. 3, 2006
This was delicious! Some ate it plain, others with sour cream in a tortilla, others the next day as leftovers. It was good every way we ate it. I cooked my own black beans instead of using canned ones. Next time I will add more lime juice and cumin as you could hardly tell there was any in the first place. Even without those flavors being strong, it was still tasty.

Strawberry, Kiwi, and Spinach Salad

Simple and yummy. I searched a couple stores and couldn't find raspberry vinegar, so I used Annie's Raspberry Vinaigrette. I also toasted my walnuts.

Lindsay® Olive and Brie Pizza Pie

Reviewed: Apr. 18, 2006
Lots of potential. Our only complaint was that the main thing we could taste was the dijon ... and we only used about half of what was called for. Perhaps we've got a super spicy brand at our house. We're going to try it again with a different mustard. Used one reviewers suggestion and exchanged basil for oregano.

Bacon Ranch Pasta Salad

Reviewed: Apr. 8, 2006
This was just ok. My main complaint is that it was so salty!! The mix, olives, and bacon was too much I guess. I will definitely try it again, but with a few changes next time. First, I used Hidden Valley's Buttermilk Ranch dressing mix, as that's what I already had at home. Next time I'll use regular ranch mix. I will probably also cut back to two tablespoons of ranch mix. If it isn't "ranchy" enough, then I'll mix some with a little milk and add it later. It was good enough to try again, but not as tasty the first time around as I'd hoped.

Slow Cooker BBQ Pork Chops

This was easy and tasted good. Not earth-moving or anything, but a dish we'll make again. I used KC Masterpiece Original and added about 1/3 cup water and 1/2 cup finely chopped onion.

Quick and easy lunch when served with fruit. We skipped the butter, as there was no need for it, and dipped them in honey.

Grandmother's Buttermilk Cornbread

Reviewed: Feb. 6, 2006
Glad you are all enjoying this recipe. Just wanted to mention a few things in response to some reviews. First, I mix all ingredients in the pan I melt the butter in. Less dishes. Second, I often use whole wheat flour to cut sweetness and make it a tad more healthy. Third, it freezes fabulously. I always make a double batch, remove one from the pan after cooling, wrap it up and pop it in the freezer. Thanks for all the rave reviews! 3/20 Based on some reviews I've read, I want to clarify something. I use a regular pot to melt my butter in. After the butter has melted I proceed with adding the rest of the ingredients in that same pot. I do NOT get a separate bowl for mixing in. After all the ingredients are mixed in the pot I pour the batter into a baking pan. I do NOT mix everything in the pan I'm baking it in. I do NOT keep the butter and sugar mixture out when mixing the rest of the ingredients. Hope that helps. 7/24/10 I'd change the recipe if I could, but I can't figure out how, so I'll mention here that the normal baking time is 30 minutes. I put 30-40 minutes in the directions because it takes longer when you use whole wheat flour, which I often do. I'm guessing those who complain about it being dry are just seeing the "cook time - 40 minutes" at the top and overbaking it. 3/16/11 I never claimed this was a Southern recipe & couldn't figure out why some reviews pointed out that it wasn't. Evidently Allrecipes put it in that category. Sorry!

Gingersnap Pumpkin Pie

Reviewed: Nov. 25, 2005
Really tasty! I appreciated the review which mentioned the filling would still be watery, as I would have let it overbake otherwise. At the suggestion of other reviewers, I also added ground cloves, in addition to the other spices. Anyway, my crust was a little hard on the bottom edge, where the crust bends up the sides, difficult to cut through and bite. Otherwise, it was great. Love the combination of flavors. Will definitely make again!

Smoked Salmon and Dill Vegetable Bites

All I have to say is yummy, yummy, yummy!! We used fresh parsley, rather than dried. Next time I'd like to try it on something non-veggie, like crackers.

Jalapeno Cheese Squares

Reviewed: Dec. 9, 2004
We felt pretty neutral about these, although people at the party we took them to said they loved them. They tasted a little flat, no kick from the jalapenos. Next time we're going to try it with diced green chiles. Definite potential.
