Napa Cabbage Salad

One of my all-time favorite recipes! We actually serve all three parts of this separately. That way people can have as much dressing/crunchies as they like, and since the cabbage & crunchies aren’t wet, they make good leftovers the next day. Just make sure to store your crunchies in an airtight container in a cupboard, not in the fridge.

Cheesy Acorn Squash

This tastes similar to stuffing, but with squash instead of bread. So, if you like the flavor of stuffing but aren't crazy about soggy bread, then give this a try.

Tropical Salad with Pineapple Vinaigrette

Perfect combo of sweet & salty with a nice cruncy. I always serve it with Hawaiian Grilled Chicken, either on the side or chopped ad added to the salad.

BBQ Pie

I read the reviews and made the following changes - added some garlic powder and seasoned salt to the meat/bean mixture, only used 1/2 cup of barbecue sauce, doubled the crust, and skipped the extra sauce and cheese on top. It was perfect!

Slow-Cooker Chicken Tortilla Soup

So good! I put frozen breasts in the crockpot, pull them out right before serving, shred them with two forks, then dump them back in the crockpot. I use a can of diced tomatoes instead of whole because my life is easier when soup doesn't have ingredients that are bigger than mouths of children. Plus, I find it silly to buy whole tomatoes and crush them when chopped tomatoes are available for the same price. I don't bake tortillas and just used tortilla chips instead. Tastes great and saves a bunch of extra work.

Tortellini Pesto Salad

I love this!!! We quartered the olives into slivers and used two cubes (ice cube trays) of frozen, homemade pesto. So good!!

Easy Breaded Shrimp

Super easy! Super tasty! Even our shrimp hating and our alleged vegetarian kiddos loved it. :) We added some brown sugar & Tony Chachere's Original Creole Seasoning to the bread crumbs. Yum!

Mustard and Veggie Pasta Salad

This was a total flop! All you could taste was the Dijon. Perhaps the brand we used, Beaver, is just too strong. I had to rinse all the salad out in a colander and then just squirt some Italian dressing on it. The veggie and noodle combo was fine, but the dressing ruined it all.

Heddy's Black and Red Bean Soup

Easy peasy! And tasty too! I made the chili powder version and really enjoyed it. I used dried beans I'd previously cooked and frozen. I'll also make a shameless plug for my Grandmother's Buttermilk Cornbread recipe on here and tell you that it is great served with this soup!!

Indian Chapati Bread

It was Foreign Food Night at our house and we were eating Kenyan food. Every Kenyan food list I saw listed chapati as a common food. It was my first time eating it and we all liked it. Super simple!!

Refried Beans Without the Refry

Easy and tasty! I left the jalapeno half intact and removed it after cooking. Next time I will dice half the onion and blend it in at the end for a little extra flavor. Jumping back to say that I made these differently today and still love them. I did a double batch with half black & half pinto, one diced onion, no jalapeno ... and they're wonderful!! This is such a good recipe and an easy one to tweak.
