Breakfast Casserole III

A simple tasting, but still flavorful dish. I cook the onion & potato mixture in the sausage grease, adding additional butter as needed. It *is* pretty greasy, though, when you cut into it, despite thorough draining of everything before baking.

Yum! I accidentally discovered that they turn out just fine, even if you forget to dissolve the baking soda in the milk and just dump them in separately. :)

Scrambled Egg Muffins

I got 15 muffins from this and they tasted great, but stuck badly to my well-greased pan. Next time I'll probably just do it in a skillet like regular scrambled eggs.

Amy's Barbecue Chicken Salad

So good!! Unless your lettuce heads are unusually microscopic, then one head of lettuce is more than enough. I use two cups of the best beans in the world (refried beans without the refry from this site, left unmashed) in place of canned beans (pulled from the freezer), frozen corn in place of canned (we just thaw it first), and bake my chicken when grilling isn't convenient.

Cranberry Sauce

This is so good!!! After reading the reviews, I decided to do use 1/2 cup white sugar and 1/2 cup brown sugar, plus a dash of cinnamon. I also cooked it 15-20 minutes to get a thicker sauce. Perfect on its own or as a spread for turkey, cream cheese, & cranberry sauce sandwiches.

Baked Pork Spring Rolls

No-Fuss Pumpkin Cake

Our 8yo made this a few days ago in a roasting pan (we don't have a 15x10) and it was good. Really moist! I think it tastes like spice cake and not like pumpkin, so I'd probably just opt for a boxed spice cake mix next time for the sake of convenience.

Fabulous Zucchini Grinders

I really liked these, but I'm the only zuke-liker in our family of five. However, two of the non-likers also liked them - one a little, the other a lot. The other two were neutral, though one of them ate two sandwiches. We followed the suggestions to toast the bread while the oven was heating and to put cheese down first as a sauce barrier. No soggy bread here! We also used about one small/medium zuke per sandwich and Mexican cheese blend instead of mozzarella (it's what was already in the fridge)).

Creamy Lemon Pie

Our 8yo son made this for our family and it was delicious. The texture is very similar to cheesecake and the lemon flavor is definitely noticeable, though not overwhelming.

Death By Garlic

I add extra garlic and have people put the cheese on their own portion, rather than adding it to the pot. After reading some of the reviews, I also decided to add a pound of chopped kielbasa to this dish, cooking it with the garlic. Simple, but tasty!

Asian Lettuce Wraps

Delicious! I coarsely chopped a can of water chestnuts and used them in place of the tofu. We also had some family members eat it salad-style, scooping the meat mixture and rice over a bed of chopped lettuce.

Luscious Slush Punch

Yum! Used one cup of sugar and froze in two gallon-sized freezer bags. Pulled one bag out an hour before serving and the other one when the punch bowl was about half empty.

Easy Baked Ham

The whole fam loved this one!! I've made it with a couple 2-ish pound, fully cooked turkey hams that I sliced up. I also like to use crushed or chunk pineapple instead of sliced because every slice of ham gets some pineapple with it. The liquid/sauce in the pan is great served over mashed potatoes or rice!
