Peanut Butter Vegetable Chicken Soup

Reviewed: Nov. 20, 2013
The peanut butter was a fun twist on a chicken veggie soup and I liked the variety of veggies in it.

Brunch Egg Bake

Reviewed: Jun. 16, 2013
Everyone in our family loved this, including the mushroom haters. The only things I changed were to chop fresh mushrooms instead of using jarred ones, use fresh basil instead of dried, and to switch the order of ingredients in the egg mixture. I didn't want lumpy batter, so I mixed the dry ingredients, slowly whisked in the milk, then beat in the eggs.

Creamed Hard Boiled Eggs

Reviewed: Sep. 2, 2012
We've been making this for quite a while, but I just realized I never wrote a review. Oops! After reading the comments, we add an extra 1/4 - 1/2 cup of milk and season with garlic salt, dry mustard, and/or onion powder. Simple, but tasty, comfort food.

Yum! I added a little garlic powder, onion powder, and Italian seasoning, then used an immersion blender to puree it.

Brown Rice Lentil Salad

Reviewed: May 23, 2012
I double this recipe for our family of five eaters, use chicken broth instead of water and bouillon, and serve it over spinach leaves. You could use veggie broth or bouillon to make this a vegetarian dish. For the sake of efficiency, I cook my lentils and rice together using a 1:2 ratio of food to water or broth. You can do that on the stove or in a rice cooker. We've found that this has a bite to it on the day you make it, but tones down quite a bit as leftovers on day two.

Pork Apple Burgers

Reviewed: Feb. 11, 2012
Yum! We added some oats to hold the burgers together better, grilled the pineapple slices, toasted the buns, and used the commenter loraleigh's spread suggestion (mayo, pineapple juice from the canned pineapple, honey, lemon juice, and seasoned salt). Delish!

Olive and Feta Pasta

Reviewed: Oct. 21, 2011
We double this for our family of five, which allows for some leftovers, and make the following changes - leave out the zucchini, add one jar of marinated artichoke hearts (with liquid) & one can of plain artichoke hearts (drained), use a bunch of extra olives and feta. You can also use regular, button mushrooms instead of crimini ones. This dish would be really good with sun dried tomatoes, but I haven't actually tried it that way yet.

Excellent! My husband, who adds seasoning to just about everything, ate it as served and loved it. That's saying a lot!

My Mother-in-Law's Plum Bread

Reviewed: Sep. 14, 2011
Yum! Made two loaves and froze one. Just as good from the freezer as from the oven and is great when toasted.

Plum Buckle

Reviewed: Sep. 10, 2011
Excellent plain or with vanilla ice cream! I'd recommend adding the milk one cup at a time so it doesn't splash everywhere when you mix it in. I'd also suggest not softening the butter in the topping and just cutting it into the mixed dry ingredients instead. If it's soft, then the topping is very gooey and not crumbly at all. Tastes fine either way, but it's just hard to glop the topping on the top of the batter if it's gooey.

Spinach Lentil Soup

Reviewed: Jun. 19, 2011
So good!! After reading the reviews, I made a few changes. First, I add the 2/3 cup of water and uncooked rice to the pot along with the lentils and the rest of the liquids. Second, I switch the quantities of broth and water, using 2 cups of water and 6 cups of broth. Third, I throw in 2-3 chopped cloves of garlic and a couple extra ounces of kielbasa. I know the thought of lentils and spinach would make a lot of people gag, but this is not an earthy, healthy tasting soup. It's packed with flavor and absolutely delicious!

Slow Cooker Lentil and Ham Soup

Reviewed: Mar. 16, 2011
I use a 14.5 oz. can of tomato sauce instead of 8 teaspoons and two cans of broth instead of 32 ounces. It's perfect, neither too watery nor too thick. Our soup is ready to eat in 9-10 hours, so just keep an eye on yours. While the taste won't change, you don't want your lentils to overcook to the point of disintegrating.

Best Bean Salad

Reviewed: Mar. 2, 2011
This is like the three bean salad you find at a deli, but better! I don't use canned beans, though that's the only way I could find the wax beans. So, I used canned wax, frozen green, and dried garbanzo, kidney, and black that I'd previously cooked and frozen.

Beaker's Vegetable Barley Soup

Reviewed: Feb. 23, 2011
This was not a thick soup, which was fine, though the leftovers will be thick as the barley continues to soak up liquid. I really liked it and the vegetable soup haters in our family really liked the flavor of the broth. The only changes I made were to use dried beans I'd previously cooked/frozen and to use a handful of chopped, fresh parsely instead of dried.

Barley Bake

Reviewed: Feb. 7, 2011
I really like this! The first time I made it I jotted down the recipe on scratch paper and accidentally used 2 cups, rather than two cans, of broth. Needless to say, the barley was a little chewy. :) The second time, still not realizing the error in how much broth I was using, I used one can of broth and covered the dish with foil for the first hour of baking. Turned out great! I may just do it that way from now on, though I'm a little curious about how it would turn out with two cans of broth. I double or triple the amount of mushrooms when I make it.

Quinoa and Black Beans

Reviewed: Jan. 31, 2011
Really tasty! I use a full can of broth, as I'd rather not have 1/2 cup to figure out a use for and substitute four cups of Refried Beans Without the Refry (from this site) for the canned ones, which adds extra flavor.
