I love the many foods of Texas and Louisiana. My natural love is smoking briskets. Second is Tex-Mex, followed by Cajun/Creole cooking.

Texas style BBQ Brisket, cheese enchiladas, and ribs.
My favorite family cooking traditions
Southern. I lived up north for a few years and they did not know how to use garlic and onions. It's great to be back down South again.

I have been experimenting with the wonders of Pressure Cooking. It saves a lot of time.
My cooking tragedies
Cooking always seems to go wrong when the phone rings. It messes up the internal clock in my head and breaks the rythm in the kitchen.

Grands!(R) Mini Chicken Pot Pies
Not five stars, but a definite four stars. Eating these were fun and filling, which makes up for the missing fifth star. I stuck with the recipe which is unusual for me. The only change is that I had a 6 muffin tin and eight biscuits, so I separated the remaining 2 biscuits (peeling them apart in thirds) and covered the tops with the 1/3 separated biscuits. Wow! So easy and so good. family loved them too. Next time I might at some garlic powder and onion powder, but the were really good just as the recipe alone.

Swanson(R) Ultimate Mashed Potatoes
This was really good. I might add cheese to it next time and it definitely need salt.

Smothered Pork Chops
This is a keeper! Even my picky child ate all of his pork chop. Extremely tender, cut with a fork. Maybe those negative comments cooked their pork chops instead of just browning them. I browned the outside since it would be simmering for another 30-40 minutes. I will also make with mashed potatoes to enjoy the gravy even more.
