About this Cook
By day I'm a Legal Assistant and by night a closet cooker. When I need therapy, I head to the kitchen for a glass of wine and the pots and pans! I drool over Tyler Florence and watch lots of Food TV and reality shows. I have gotten many great recipes from Tyler and the Barefoot Contessa.
My favorite things to cook
I'm definitely an appetizer freak! Love to try new recipes that I find on AR and wherever I can.
My favorite family cooking traditions
I was born in the South but moved to beautiful Oregon when I was 6 months old. My mother was the best Southern cook and had me in the kitchen when I was 4 years old; I would actually pretend I had a cooking show even then. That is my basis for all of my cooking, a pinch here and a dab there. She instilled such of love of cooking that I cherish!

My cooking tragedies
The all famous putting a turkey in an oven that was not turned on and having 20 hungry guests waiting. That's ok.. by the time I poured them enough wine, they didn't even mind!

Cilantro-Lime Rice
I used brown rice and cooked according to package directions for 50 min. using plain water and a bay leaf or two. When done, I removed the bay leaf and then added zest of a whole lime and juice of 1/2 lime. I also added salt and a little avocado oil (could use olive oil), and cilantro. My son said it tasted just like the rice at his favorite Chipotle Grill place.

Anniversary Chicken I
Maybe not the healthiest dish but one of the best I've had on this site! I put everything in slow cooker except the cheese and bacon. When chicken was done and tender, I shredded it in the pot and added the cheese and bacon and let rest with lid on for 1/2 hour. Served with garlic mashed potatoes and fried cabbage and onion. Rave reviews from family! Thank you!
