Fresh Tomato Basil Sauce

Made this today - the only changes I made was in the prep of the tomatoes. I used fresh Roma tomatoes which I blanched, skinned and then "squished" by hand into small pieces. This sauce is flavorful and a great base for pasta dishes. Tonight we'll be enjoying it with meatballs and rotini :)

Creamed Broccoli Soup

Loved this soup, only gave it 4 strars bc I made a couple of changes; celery instead of carrots, no soy sauce and homemade chick broth instead of bouillon. I made a second customized batch with rice and cheese which I think is perfect! thanks for sharing.

Foil Grilled Trout with Wine

Recently tried this recipe with trout we caught in the Gulf; the wine kept everything most, the lemon juice was a great accent but like other reviewers, I missed the garlic...will make again, w/garlic!

Pork Tenderloin in the Slow Cooker

I made this last sunday bc I specifically wanted a crock pot recipe, I made it exactly as written except for the amount of soy sauce - knew that would be too much for my tastes. 3/4 cup of merlot was too strong of a flavor for me; next time I will cut the wine amount by half. There will be a next time bc the tenderloin was so tender that we literally cut it w/a fork.

Hearty Halibut Chowder

First, let me say that this makes a LOT of soup. The first time I made it exactly as written - VERY GOOD, but I didn't care for the tomatoes. Last night I made this for the 2ncd time w/these changes; Divided all ingredients by half. Substituted cream corn for tomatoes & added 1/2 tsp minced garlic & 1 TBSP of flour to onions. This soup was creamier & richer...Hubby said best fish chowder ever!

Swiss-Barley Mushroom Soup

I've made this soup twice and really enjoyed it. The 1st time I made it exactly as written, except I cooked regular pearl barley seperately and added it to the soup. It was fab; rich and filling; not your ordinary mushroom soup! The 2ncd time I made it with olive oil insteand of butter, low-fat cheese & 2% milk. when compared to the original it was not as rich, BUT it was still very satisfactory & much healthier. Will definetely make it w/the healthier options again. thanx for sharing.

Absolutely Ultimate Potato Soup

Ultimate comfort food! I've made this recipe many times & it is always a hit with my family/friends. I personally don't care for tarragon, so i use rosemary instead of the tarragon & cilantro. Tip for those who are concerned with the amount of time spent chopping the veggies - i chop celery, onions & bell peppers up as soon as i buy them & put them in the freezer in zip lock bags. When I'm ready to make this soup (or any other recipe) I just grab my pre-chopped vegs. from freezer and add them frozen to the pot.
