Black Magic Cake

Perfect. Just... perfect. Like others stated I was put off by the thin batter. I'm such a kitchen klutz (and a regular klutz) that I figured I had missed a step or ingredient somewhere. Convinced that the cake was ruined, I took the loss and put it into the stove anyway. What came out after nearly 55 minutes (40 minnutes wasn't enough. The cake was still really wet) was pure bliss. It was chocolaty. It was moist. My mom thoroughly enjoyed it, though initially she wanted nothing to do with the cake out of fear that it would taste like coffee (but who doesn't like coffee? Weird). I couldn't find a single hint of it in the cake. Just a rich chocolate flavor. Too bad in my hurry I opted for frosting-in-a-can. Nothing wrong with it, but I'd love to make a frosting that pairs with it. Definitely my new go-to chocolate cake recipe!

Creamy Mushroom Soup

Oh I am in love with this recipe. On the night I prepared it, there was a big storm coming through which killed the power as I was cutting the mushrooms. But instead of placing this on the back burner, I followed through it with estimated measurements and the backlight of my cellphone to guide me. Originally I wanted the soup to be creamier, but without power, blenders and mixers were out of the question (there wasn't sufficient lighting to cut the mushrooms and I for one love my fingers). Even through it all, this soup came out as a smash hit. There weren't any major changes added here except chicken broth being replaced with beef, and both white and portabella mushrooms being used in the place of shiitake. A few more spices were added, but that's neither here nor there. A friend of mine try this soup reheated yesterday (she's my food guinea pig ---always up to taste my concoctions). Not only did she fall in love with this, but she has even asked that I make a larger batch this weekend. Definitely a keeper!

Baked Buffalo Chicken Dip

The first time I made this was on New Years Eve. I was pretty skeptical since I'm not big on blue cheese, but figured it would taste better than ranch of all things *blech*. A few people in my group shared their skepticism as well. Most either hate hot foods or just don't care for the taste of blue cheese either. Even so, I'm someone who likes to be adventurous, and the finished product in the video looked so amazing that I couldn't ignore this recipe any longer. The end result was perfect. In fact, every single person who shared their doubts about it (myself included) wound up coming back for seconds and then thirds. By New Years day the bowl was literally picked clean. I have made this again during the Super Bowl season, and will be making it in the near future. Highly addictive!

Chantal's New York Cheesecake

My cheesecake turned out completely awful. Okay, that's a half truth. The cheesecake itself tasted heavenly, but it wont be winning any beauty pageants anytime soon. I'll accent Morena's statement---the destruction of my cheesecake was my own doing. This was my very first attempt at making cheesecake that didn't come from a box (I hate those so very much, but it was what I had been accustomed to). That alone makes it special. I lacked the springform pan (again, all my fault), but all hope wasn't completely lost. There were cracks and at first it seemed mushy in the middle, but after placing it in the freezer for a few hours, it pulled together and tastes amazing. It was thicker than I imagined it would be, and my family loved it. This was only a prototype---one that will be made again and again. Five stars!

Mouth-Watering Stuffed Mushrooms

I made this on a whim and don't regret a second of it. It was easy to make, and came out flawlessly. I don't like tweaking recipes on the first try, but I added a few chopped jalapeno peppers because I had a taste for some heat. Still very good overall.

Chef John's Buttermilk Biscuits

Wow! What a great find! I didn't change a thing in the recipe. Sure, my biscuits came out flat and less appealing than the ones featured, but that's entirely my fault since I always seem to make them uneven. Go figure. Despite my kitchen blunders, the biscuits were still light and flaky. They were a big hit with the family too. In fact, they ate them up---literally! Definitely making again (hopefully making it perfect the next go around).

Double Layer Pumpkin Cheesecake

Oh I loved this recipe! It was all around fun for me, the ingredients were easy to gather and everything pulled together nicely in the end. My friends couldn't keep their sticky little fingers out of the cheesecake and needless to say, I didn't even get a big slice for myself. Obviously I'll be making TWO of them the next time.

Sean's Falafel and Cucumber Sauce

Okay so I wanted to try it your way first, however I'm not a fan of frying since I'm doing the whole weight loss thing. Still, I don't like tweaking other people's recipes until I've tried it at least ONCE the way that it was written. I noticed that Heavensnt86 mentioned something about baking them and I was curious about that method. Seeing as your recipe makes eight, I decided to half and half it---that way I could try both the baked and fried versions and would still follow the directions...err.. somewhat. Fried is fantastic! This was my very first time attempt at trying them homemade. The directions were simple and they were super duper tasty (err though I burned the holy out of my arm during that frying process but that's all my fault... and thankfully mustard helps). As the Heaven's baking.. well it was still pretty good but it was drier. Luckily the cucumber sauce will help with that. Both are great and I'm definitely making this again. The sauce is incredible though next time I'll try using Greek plain instead of the more watery non-Greek one. This went well with the homemade pita bread that I'd made earlier today. Hands down, a great meal and superb snacks for a later date.

Chef John's Pita Bread

I tried making pita bread in the past and every time I failed miserably so of course I was skeptical that I could successfully prepare pita bread using your instructions (It's not you---it's definitely me). Call me a bit overdramatic, but I literally teared up when my first batch came off the stove browned to perfection and actually sturdy enough to open as a pouch. I guess I just had to watch someone else make them before giving it another shot. Thanks from the bottom of my heart. This is now my go-to recipe from now on. Now if you'll excuse me, I have a batch of falafels to make to go along with these bad boys.

Greek Pasta Salad III

This was the first time I'd ever made Greek pasta salad, so I was pretty nervous about making it. There was an upcoming potluck that my friend was throwing and I wanted to try something that was tasty, quick, and not too expensive to make. After following the recipe to a T (Actually I doubled the serving size but that doesn't count as 'tweaking' the recipe). I let a friend of mines sample the finished product. She took a bite, looked at me, then snatched the bowl and walked off with it. Her exact words were, 'This *bleep* is good!". That poor pasta salad didn't stand a chance and so it has been added to my recipe box for good. Super Yummy!
