Marshmallow Popcorn Balls

Reviewed: Oct. 24, 2013
I had never made popcorn balls before and this recipe looked like a very easy recipe to follow. Plus, I had all the ingredients in the house so I decided that I would give it a try. They turned out very well. The recipe was very concise and direct. There was nothing to misinterpret. I did notice that the mixture would stick a lot to my hands when making the balls. The recipe said to put butter on your hands to keep from sticking. I had to keep reapplying the butter because it would stick too much. However, it didn’t seem like the mixture stuck together because I had to pack them together just to stay. I used many different types of popcorn that I had left over from the popcorn bar we had at my wedding. I used buttered popcorn, kettle corn, and cinnamon-flavored popcorn. I would have to say that the best one was definitely the kettle corn. I would suggest that everyone try it with kettle corn. I also tried to add m&ms to the mixture with the buttered popcorn; however, that just made the chocolate melt which made the balls less sticky and they fell apart.

Simple Peanut Butter Banana Bread

Reviewed: Sep. 18, 2013
I love peanut butter and bananas together. The best snack is a peanut butter and banana sandwich. When I saw this recipe, I knew I had to try it right away. It turned out very good; however, I thought that it would taste better than it did. I couldn’t really tell there was peanut butter in it. It has much more of a banana taste than I expected. I think maybe next time I will try to had peanut butter without making the batter to thick. I didn’t have a loaf pan so I used a 7 by 11 baking dish. I had enough batter to fill up the entire backing dish. I would suggest using two loaf pans when making this recipe because you will easily have enough batter. I found the bread to be incredibly dense and a little bit dry. My mom suggested adding banana pudding to the batter to make it denser. However, by doing that you will also be taking away more of the peanut butter tastes. All-in-all, this is a good recipe for peanut butter banana bread. My fiancée asked if next time we make it to add chocolate chips to make peanut butter chocolate chip banana bread.

Easy Pumpkin Spice Latte

Reviewed: Sep. 9, 2013
I found this recipe and instantly thought how perfect it would be to make for my fiancée. He is a coffee addict. I also thought that I might like to try it too. I love anything pumpkin and am always looking for the next pumpkin recipe. However, I am do not like coffee so this recipe for me was kind of a disappointment. I followed the measurements that were listed for the half and half, sugar, and pumpkin pie spice; however, it was hard to taste anything over the strong coffee taste. I would suggest doubling the measurements just to have it taste more like pumpkin and to be sweeter. I used my keurig coffee brewer for this recipe. I believe that it was way easier. I just mixed the ingredients in one cup and then brewed the coffee right into that cup. Also, I used regular whipped cream in a tub than in a can. I have always that whipped cream from a can tastes funny. To me, the best part was to add a huge heaping spoon full of whipped cream to my latte. My fiancée gave his approval for this recipe and thought that it was absolutely delicious. I guess it just depends on how much you like coffee.

Cheesecake Brownies

Reviewed: Sep. 4, 2013
I was first drawn to this recipe because it looked so easy to make. I love easy recipes and certainly was not disappointed by this one. The two desserts I love most are cheesecake and brownies so why not combined the two. In order to spice up this recipe, I added in a bag of butterscotch chips into the brownie mix. I have to say that this took away from the cheesecake flavor. However, it did make it the brownies sweeter. I love rich brownies and by adding any type of chips (chocolate, white, butterscotch, etc.) you will definitely get richer brownies. I think it’d be interesting to try cherry chips to have cherry chocolate cheesecake brownies. The only issue I had with these brownies is they took a long time to get done. I used an 8 x 8 pan and baked them according to the package which said 35 minutes. They needed to back an additional 15 minutes and then they still were not done. Overall, I say they baked for at least an hour which made the outsides extra crunchy. I would suggest putting them in a 9 x 13 pan so they will bake more evenly.

Slow Cooker Chicken Stroganoff

Reviewed: Aug. 28, 2013
I found this recipe on Pinterest and thought that would try because it seems very easy. It was certainly easy to make and tasted really good. I didn’t follow the exact times of the recipe. It suggests to let chicken cook with the Italian dressing for 4 ½ hours before adding the cream cheese and soup. I think that I added the cream cheese and soup after 2 hours of cooking. I don’t believe it will make much of a difference if you mix everything together sooner. I served it over noodles instead of rice so it would be more like a stroganoff. I put in only half of the packet of Italian dressing mix after reading reviews that said it was too salty. I thought the taste was perfect so I would recommend only using half of the Italian dressing mix. However, it was almost too creamy for me. I think next time that I might try using half of the cream cheese and maybe add some white wine. I think that it definitely made enough sauce as it seemed to be more sauce than chicken. Next time, I think I’ll try adding some onions and mushrooms to the sauce. I think this recipe can be absolutely delicious with some slight tweaking. All in all, it makes for a quick and tasty meal.
