Allergy-Friendly Comfort Soup

This recipe was extremely yummy! Very hearty & tasty while not weighing you down after eating it. Loved all the elements together. I only have two critiques. First, I halved this recipe since the number being served was only two people and 10 servings seemed a bit silly, and when I did so I noted that there didn't seem to be nearly enough liquid for the amount of vegetables in this dish. It's hard to imagine how it would be different if I'd doubled everything. Fortunately I was able to simply add more coconut milk & water to bring the ratio to a reasonable amount (and to compensate I added more spices, halved yet again). This seemed to rescue the dish quite well. So at a minimum, if you're halving the recipe be cautious and keep the ingredients on hand. Secondly, the name; you've got to change the name. "Allergy Friendly Comfort Soup" does NOT sound tasty. I wouldn't even tell my wife what the recipe was called because I was sure she'd ask me for something else. All that said, this recipe is super delish and will definitely go into our recipe box!!

Broiled Parmesan-Lemon Tilapia

This was a fantastic recipe. My wife is extremely critical of fish recipes and she just gobbled this up. I didn't have any sazon seasoning, but I had something called 'Spike' seasoning which is a similar all-purpose seasoning that we used instead. Other than that, we followed the recipe exactly. We might use less butter (used actual butter not margarine) next time as I felt it was richer than it needed to be to impart all the flavor. I also used low-fat mayonnaise instead of fat free. The extra calories from the low-fat instead of fat-free mayo & full fat butter probably also contributed to rich taste. Either way, super yummy and will definitely make again!

Baked French Fries II

This was really good! I was surprised how well the flavors stood out and how tasty these fries were! I think I might try flipping them next time to try to get them more crunchy on all sides. But in any case, excellent dish!

Sara's Spanish Omelet

Thoroughly enjoyed this dish! Had some tomato sauce I wanted to incorporate into a breakfast dish, so I searched for tomato sauce and eggs and this popped up. Glad it did! Halved the recipe, and added some a half teaspoon of garlic (because everything's better with garlic!). Didn't have Worcestershire sauce, so I added some beef bouillon to give the flavor some depth and put in a dash of smoked Tabasco sauce. Definitely would make again!

Tzatziki Sauce II

This was excellent! I was really impressed with the flavors. I also used greek yogurt and it was perfect. I should mention that the different of chilling it first was huge. At first when I tried it, before I chilled it I was dubious, but afterwords I was really impressed.

Crab Hash With Old Bay & Basil

Made a version of this with shredded potatoes that went pretty well. Also shredded the onions. Other then that I kept it mostly the same. Quite yummy!

Favorite Old Fashioned Gingerbread

Excellent recipe!! Although modifications are definitely recommended. As suggested in previous reviews, doubling the spices is the way to go. I saw one or two suggestions for replacing the hot water with coffee. I took that a step further and replaced it with chicory coffee. The spiciness of the chicory really gave it some fantastic flavor. **Note! The first time I made this I made it with chicory coffee and blackstrap molasses. Holy moly!! It was one super rich and dark gingerbread!! I didn't care for it and would suggest using normal molasses, but my wife loved it, so if you think that might be your thing, give it a shot!

All Day Macaroni and Cheese

I've made this recipe for years and years. Only recently occurred to me that there might be a copy of it on AllRecipes! Helpful hints: (1) The sharper the cheese the better. This recipe depends almost completely on the cheese for its flavor, and the milk will mellow most of the sharpness. (2) You can definitely cook it on high for about half the time. Although, in that scenario, I wouldn't recommend following other suggestions to not cook the macaroni. Al dente is fine though. (3) The shallower the crockpot the better. The more of this dish that you can cover with the cheese topping the prettier and tastier it'll be.

Beet Salad with Goat Cheese

This was super, super yummy. My only critiques were that it had a bit too much orange-y flavor. Perhaps I'll use less orange concentrate next time and the beets took easily twice as long as they were supposed to. But still an excellent dish and will definitely make again!

Eggplant Parmesan II

This was an excellent Eggplant Parmesan. I followed many of the suggestions and cranked the oven up to 450 and baked the slices 7 minutes on each side. Then instead of layering the sauce and cheese, I layered all of the slices in the dish and then covered that with a layer of sauce and then cheese. Then we sprinkled on fresh basil rather then dried. Granted we were only using one eggplant, so it wasn't nearly as much. Had we used the recommended number we probably would have layered. Still an excellent and yummy dish.

Roasted Portobello Mushrooms with Blue Cheese

I thoroughly enjoyed this recipe, although my wife found so much blue cheese a bit too rich for her tastes. Only changes I made were to add some chopped garlic and then to drizzle some melted butter on top. Yum!

Fennel and Mustard Seed Chicken

Dutch East Chicken Wings and Rice

This was a great recipe! My wife and I used it for chicken breasts instead of wings and it worked great! I forgot to cover the pan, so the sauce didn't work out so well and it dried onto the chicken, but I spooned what was on the bottom of the pan over the chicken and that went a long way. Used brown rice for the the rice dish. It was okay. Will probably use again.
