Ultimate Twice Baked Potatoes
I've been making these for 30 years, in one form or another. For a good skin, rub the potato with oil (any kind), and cover with salt. Do NOT poke holes. Bake in oven at a higher temp (400) until done. This gives the potato a very nice flavorful, hard skin and creates a fluffier inside. I like to mix bacon and green onions in the mix to meld all flavors. And just smash for a chunkier consistency. To the mix, I add about 2 T of horseradish (medium), a few dashes of hot sauce and a little Worchestershire to kick it up. For the topping, I mix shredded cheese with a little Panko or bread crumbs and some melted butter. After baking for the time suggested, broil them for a minute or so to get a nice crust on top (watch them!) Delish!

Bubba's Best BBQ Sauce
Made it the first time exactly as written. To the first batch I had to add more brown sugar, salt and pepper to tame the vinegar. I skipped the Savory. On the second batch I made the following revisions for my own tastes: Cut back on the cider vinegar from 1/2 to 1/4 c. You can always add more, but can't take away.... I ran out of molasses after the first batch but still had a bit left, and added some honey. Added 1 t. Paprika, some hot sauce and a few shakes of ground Black Pepper. This is a great basic recipe to create your own personalized version. Keep in mind that hot sauces contain vinegar as a main ingredient. Worchestershire is also mainly vinegar and there's a lot of it in this recipe, so start on the small side and add as needed ~ Thanks for the basic ingredients to make a great recipe!

Chicken Enchiladas II
A great way to use leftover chicken and the other ingredients are usually on hand. I substituted 1/2 can of mild, diced jalapenos, increased the sour cream and added cumin. I also added canned black beans as a filler to stretch the recipe.
