I really do not enjoy cooking, ever. But I guess you have to feed your kids, right? I am thoroughly impressed by people who can throw together great dishes or come up with their own recipes. I don't want to be them, but they are fascinating. All recipes does help me hate cooking a bit less. Just a tad. Sometimes.

Red Skinned Potato Salad
With over 1500 reviews, you know it's good. But heck, why not add one more great review. It is GREAT. I love bacon. 1 pound was perfect, but I think I really used 3 pounds of potatoes - and they were on the big side, not so new. I did fiddle with this a bit - no eggs in mine, added scallions and used red onion. Also added a splash of vinegar to the mayo before adding. It's now my go-to summer picnic, potluck sharing dish and EVERY SINGLE TIME people ask for the recipe. Thanks for sharing!

Maple Salmon
This recipe is ridiculous - it is so good it actually made my kids LOVE salmon which they used to seriously despise. A few days after I made this recipe, (they practically licked their plates clean), we were passing the fish case at the supermarket. The silver brite salmon filets caught my middle son's eye. He stopped in his tracks mesmerized and muttered "Salmon?" Followed by a more excited "Is that Salmon?!" Then my other two joined in. "Where? Salmon?" They were all drawn to the case. Pressing their faces and palms against the glass all three were chanting "Saaalmon. Saaaalmon." It was an embarrassing proud moment - until a lady next to us said, "wow, they really like Salmon, huh?" Then it was just embarrassing. I cheated - I really didn't marinate, more like poured it on 5 min before cooking and then threw it on the grill. Ridiculously easy, ridiculously awesome. How the heck did you come up with this? Impressive! (Oh, the grown ups loved it too!)

Baked Kale Chips
2 out of my 3 kids loved these. My oldest hated them, but I think he must just be a crazy teenager because they were good! My middle loved the BROWNEST ones (I would have called them slightly burned, but he might have stopped eating them) and my daughter liked the crispy but less brown ones. Adults preferred the "still pretty green" ones with a slight bit of chew left in 'em - we got all varieties on each pan. BTW - we used kosher salt (not seasoned) and tossed it all in a bowl to coat evenly. They were all gone in 20 minutes. I got a tip from someone that the leaves need to be completely dry before starting the prep work or they will end up mushy. I still can't believe we even tried this recipe, (thanks CSA for forcing us to go home with kale) but glad we did. Do not listen to people who say "they are EXACTLY like potato chips!". As good as these are, the taste in not the same; don't believe the hype. They ARE however, an excellent alternative (I think I might actually prefer these, but I don't want to admit that yet!)
