Chef John's Gazpacho

Hands-down, this is the BEST gazpacho recipe I've ever tried! Incredibly flavorful with a fantastic balance of flavors and the perfect consistency. Definitely worth the bit of time. Make a day ahead so the flavors develop.

Spanish Rice II

This recipe is good, easy to prepare, and yields consistent results -- I have made this twice. The consistency is a little chewier than I care for, so perhaps I'll reduce the water a bit. Also, I don't seem to get much flavor from the chilis as written: in a can of diced tomatoes and chilis. I might prefer to saute diced fresh chilis with the onions and green pepper, though that adds another step. Also, 1 tsp of salt wasn't enough to bring out the flavors, so if it seems a little bland, try adding more.

Risotto with Butternut Squash and White Beans

Fantastic recipe! I followed it as written, and it yielded a perfectly cooked and seasoned risotto. I added quite a fair amount of salt and pepper to bring out the flavor. Also, the squash and beans add some starchiness to the dish that makes this meal a bit heartier and perhaps more suited to cool weather compared to other risottos. I will make this again!

Italian Kale

In my opinion, as the recipe is written, the kale is undercooked. It may be a matter of personal preference as well that I didn't care for the vinegar. I prefer to use fresh lemon juice instead because any kind of vinegar on cooked greens seems to be overpowering.

Whipped Cream Zabaglione

I loved this dessert! The recipe is quite simple and easy, the perfect make-ahead dessert for something that is at once indulgent and light enough to enjoy even in summer. When using Marsala, go with a white, which will be more visually appealing.

Cod Curry

Great, simple curry that is tasty and quick to make. By the way, curry powder is just a mixture of several different spices, like the ones called for in this recipe. "Curry powder" is not a necessary ingredient for a curry dish.

Pumpkin Cheese Ball

I didn't care for this recipe. It basically tastes like a sharp cheddar cheese ball, except not a very exciting one. And I found the texture from the chipped beef and crushed pineapple to be unappealing. Why make something with pumpkin as an ingredient if you can't taste pumpkin? What is the point?

Italian Sausage Stew

This recipe was pretty tasty and easy to make. I too found it difficult to find frozen Italian blend vegetables, so I chopped and sauteed onion and zucchini, then added some frozen chopped spinach and frozen chopped green onion as a substitute. I also thought that this stew needed a touch of acidity (it seemed bland, heavy on umami, and lacking depth in flavor), so I would recommend adding a splash of red wine vinegar. I also added a generous pinch of red pepper flakes and some black pepper, too.

This is a pretty foolproof recipe for a delicious pumpkin bread. Extremely easy to follow and to make, and how do I love that there are two extra loaves waiting for me in my freezer? I may make another batch next weekend!

Ibby's Pumpkin Mushroom Stuffing

I just made this for a pumpkin potluck party tonight. It was a smashing success! Beautiful balance of sweet, savory, and spicy. I did need to add more chicken broth than noted -- just keep adding broth until the bread will hold no more liquid. Thanks for this superb recipe!

Corned Beef and Cabbage II

Delicious flavor! This recipe is great! My only suggestion is to perhaps specify what variety of potatoes would work best in this dish, as I used Russet and this was clearly the wrong choice--I ended up with disintegrating potatoes. Thank you for the recipe.

Honey Cornbread

This is a great recipe. The texture is superb, and the honey taste is discreet yet distinct. However, I discovered that I personally don't care for a honey flavor in my cornbread :) Serve it hot slathered with butter. Mmmm.

Chili I

This is a fun chili to try, though I probably won't make it again. It was a very good recipe for a sweeter chili, for which I generally don't care. But the flavors were really interesting. It tastes best now, after being refrigerated for two nights. I can see why some say it's similar to barbecue, but it's not exactly like that. You should expect sweet chili with some hotness from the peppers, and unexpected mixtures of tastes.

Habanero Hellfire Chili

This is a great recipe that is flexible enough for tweaking. I won a very close 3rd place at a chile cook-off with a slight variation on this recipe. The heat from the peppers comes on slowly and fills the whole mouth, instead of burning a part of your tongue until you're in tears. I used diced pork instead of ground (a great contrast in texture). Also, I couldn't find Anaheims, so I threw in a couple of serranos and a can of chipotles with the adobo sauce. It was just a fantastic chile!
