Oranged Cranberry Sauce

Reviewed: Jan. 15, 2007
Wonderful! I'm not one for cranberry sauce, but this was the best addition to turkey that I've ever had. And you can make it ahead of time which is really important. Thanks!

Rave Reviews Coconut Cake

Reviewed: Jan. 15, 2007
Good but there's an error in the recipe. The first step that uses butter should say to melt only half the butter to fry the coconut - it doesn't say that but later says use the remaining butter. Don't mess up this step otherwise you'll have really greasy coconut. I had to drain mine twice on papertowels. Otherwise, it was good. The frosting didn't make as much as I would have liked so I'd double the frosting.

Awesome and Easy Creamy Corn Casserole

Reviewed: Jan. 15, 2007
Made this for Christmas, it was almost like a firm custard. It was ok, I followed the recipe exactly and it seemed to be the family's least favorite of what I prepared. Doubt I'll make it again, but glad I got to try it.

Potato Spinach Casserole

Reviewed: Jan. 15, 2007
I made this for the holidays, great twist to your standard potatoes and a good way to also eat some spinach! used garlic instead of green onions and not so much cheese, everyone like the dish. Thanks!

Artichoke and Roasted Red Pepper Dip

Reviewed: Jan. 15, 2007
Very good medly. I used an onion instead of a leek, added cayanne pepper since my artichoes were not marinated. I also used fresh roasted red peppers. I used a trio of cheeses including cream cheese in place of the mayonaise, parmeseacn and feta. I also added garlic and jalapenos as others suggested. I'm definitely keeping this recipe, thanks!

Smushed Apples and Sweet Potatoes

Reviewed: Jan. 15, 2007
I love experimenting with sweet potato recipes. I made this for Christmas and it was a nice twist to the usual sugar filled recipes. I used brown sugar in place of white. I'll probably make this again later after I experiment with others.

Pasta Siciliano

Reviewed: Jan. 15, 2007
omitted the pine nuts and olives. Added mushrooms and bell pepper as suggested to the lemon juice. Very lemony veggies. I thought it was nice, light and tangy but my husband didn't - I love the pucker I guess.

Meat Loaf Pie

Reviewed: Jan. 15, 2007
Good, quick (prep-wise) and easy. I cooked the meat a day before and put extra worchester and ketchup, used hash browns instead of mashed potatoes and seasoned them with salt, pepper, parmesean and feta cheese (it's what I had on hand). I also used frozen corn instead of canned. Per other suggestions I layered the meat first, then the corn, then the potatoes.

Jacksonville Carrots

Reviewed: Dec. 13, 2006
These are good, but there's so many flavors you can't really taste the carrots.

Nice suttle twist to plain rice. I used powdered cumin and cooked in a rice cooker. Will probably make again.

Mango-licious Tilapia

Reviewed: Dec. 13, 2006
The salsa is the best part! Unfortunately didn't have avocados or tomatoes, but still wonderful! My first attempt at a fruit salsa.

Loved this! Added cayanne pepper and coriander to the mix and formed the patties into 1/3 cup shapes like others suggested. Also baked at 375 for 25 minutes. Very unique texture and flavor. Thanks!

Spicy Turkey Wraps with Strawberry Salsa

Reviewed: Dec. 13, 2006
These were great. I used chicken tenderloins and I marinated it in a lime dressing marinade because I couldn't find any southwest marinade seasoning. Used regular onion instead of red, feta cheese and jalapeno and cilantro tortillas. Very light tasting and flavorful. Thank you.

Easy and good, thanks for the great recipe. I think I'll double the sauce next time because I made too much pasta.

Turkey Pot Pie I

Reviewed: Dec. 4, 2006
This was great! A good way to use up leftover turkey. I omitted the celery and added peas, it dries up though if you keep it in the fridge for too many days.

Fast and easy! Added peppers and onions, loved it! I didn't need pepper sauce as the chorizo was spicy in itself!

Camotes al Horno (Baked Yams)

Yum! I can actually taste the flavor of the potatoes instead of mashing it up with loads of sugar and tasting only that. Thanks for the simple yet satisfying recipe.

Mansaka

Reviewed: Dec. 4, 2006
I halved this recipe and used one can of diced tomatoes instead of tomato sauce and used 9 white mushrooms instead of canned and 3 small potatoes. It's like lasagna without noodles, but potatoes instead.

Oaxacan Tacos

Reviewed: Dec. 4, 2006
I tweaked this by adding cumin, cayanne pepper, paprika and some chili powder only because as I was cooking it the meat looked a bit bland. I used flour tortillas instead and cooked the onion with the meat so my hubby wouldn't have onion breath - these were wonderful! I was only able to eat one since my DH ate all the rest (only 1lb of meat, not 2). Thanks for the recipe, definitely a keeper!
