Chocolate Banana Bread

Do you want a deliciously moist, banana bread with rich chocolate flavour make this! Only change was butter because that is what I had and I added extra coco powder. The loaves weren't done at 60 min so I ended up baking then for 80 min total but that could just be my oven.

Strawberry Rhubarb Coffee Cake

Fantastic recipe!! Didn't have buttermilk so used some milk with a splash of lemon juice in it. Used fresh strawberries and made a bit more strussel topping than stated (I didn't measure). Baked in two 9x5 foil tins so I could put one in the freezer. Cooked for 55min because it didn't seem quite set at 45-50 min but I probably could have gone with 50 (I was just being paranoid).

Whole Grain Breakfast Cookies

I'm about to be a first time mom and I wanted to have something quick I could grab for breakfast or a snack. These are perfect! I changed up a few things so that they are not just healthy but support lactation as well. First I ground up 1 cup of the oats and left 1/2 cup oats as flakes to reduce the texture a bit. I subbed 2/3 cup brown sugar and a squeeze of honey for the agave. I subbed a snack size unsweetened apple sauce for the oil and used 2 eggs. I used pecans instead of walnuts, grinding most but leaving some a bit more chunky. I used crasins instead of cherries and carob chips instead of chocolate chips, 3/4 cup of each. I added a 1/4 cup whey isolate to up the protein even more and 1/4 cup debittered brewers yeast to make them lactation friendly. The yeast gives them a bit of an aftertaste so once my milk comes in I think I would cut it out. Cooking for 9 min and letting them cool on the pan for 5 min and then the rest of the way on a rack leaves them nice and chewy. I popped these in the freezer and heat for 20sec in microwave when ready to eat. Perfect grab and go breakfast/snack with tons of fiber and protein! Thanks for the recipe!

Banana Anna

I loved this! I just found out I am pregnant so I should be drinking more milk and the banana helps with the nausea. I'm not a fan of thick banana drinks so the consistency was perfect. I used a pinch of cinnamon instead of the nutmeg to suit my personal preference. If you are pregnant make sure to use pasteurized honey. Thanks for the recipe!

Pina Colada Punch

This turned out great! I made it for a work function. Instead of ice cream I used frozen vanilla soy "ice cream" so it would be vegan friendly and a can light coconut milk because that's all the store had. I left a bottle of Malibu rum on the side so people had the option. Would make again for sure!

Deep Dark Chocolate Cake

This is the first time I've made a cake from scratch and I have to say it was amazing!! I used the chocolate ganache recipe from this site instead of the buttercream frosting. The cake was great the first day but after a night in the fridge it was even more moist and yummy!
