Hot and Sweet Dipping Sauce

I love this sauce for 3 reasons- you need very few ingredients, it is easy, and only takes about 20 minutes. If you don't have minced garlic on hand, garlic powder works. I have been making this for a few years now, and it is excellent! It goes well with any asian style food. I always get compliments when I bring this to parties with my homemade eggrolls.

Slow Cooker Butter Chicken

FINALLY! I love Indian food and I have tried for YEARS to perfect a butter chicken recipe, only with something a little off, every single time. This one is right on the money! I found all the spices at Whole Foods. I truly believe that the quality of spices is part of what makes the dish. Curry paste can be hard to find but you can find the Red Curry Paste Thai Kitchen Brand in the ethnic food aisle of any super market. I used non fat plain yogurt and low fat coconut milk. It still had a hearty texture to it, but with less fat and calories! I mixed the spices separately together in a small cup before I spread it over the chicken, this allowed the flavors to blend. I am definitely adding this to my weekly menu!

Barbecued Beef

So easy! I used bbq sauce and a big squirt of ketchup. I added extra dijon mustard and wochestershire sauce. I also added some mexican spices. I reccomend cubing the meat, and cutting out the fat before hand. I let it cook overnight, let it sit in the fridge while I'm at work during the day, skim the fat when I get home and get rid of the greasy sauce, then cook on high for another two hours with the rest of the sauce (I make a double batch of sauce.) YAY!

Mango Topping

I did not use the exact measurements, I just used one mango and adjusted it to my taste. I used a lot more orange juice and water than the recipe called for. I also found it helpful to mash the mango with a fork while sauteeing it in the pan. I put this on top of a betty crocker vanilla cake, it was DELICIOUS.

Rich Chocolate Pumpkin Truffles

BEWARE!!! The powdered sugar needs to be divided up BEFORE you put it into the mixture. I almost made a huge mistake by putting too much! We made these for a progressive dinner and everyone loved them!

Chicken Cordon Bleu I

Very easy! I made it semi-low fat and took shortcuts by using Healthy Choice Ham and some low fat cheese. I'll definetly make this again! Meat pounder is definetly neccesary!
