Country Sunday Breakfast Casserole

This was a hit at the office. The only changes I made, after reading the reviews, were I used 8 eggs, about 3/4 of the gravy powder, and covered it with foil 50 minutes of the hour. I prepared everything, except the egg mixture, the night before and baked it the following morning for an hour with foil on top for all but the last 10 minutes. Sooo yummy!

Mom's Beef Shish Kabobs

Was hesitant to follow this recipe, only because it didn't have as many reviews as another recipe, but I'm glad I did. It was delicious. Used all the ingredients exactly as listed except mushrooms, and only marinated the top sirloin about 4-1/2 hrs. I also didn't baste the meat, but didn't need to, it turned out great. Used green peppers, onions, Campari tomatoes, yellow squash and green zucchini. Will use this recipe again.

Best Baked Chicken

I had chicken last night and wanted to bake it ,but wanted a different take on it. I searched "baked chicken" and came up with this recipe. I'd never thought of using sour cream as coating, but it worked well. I only had celery seed and garlic powder, but it still tasted good. So easy to make that I'd use this recipe again. I might add a little more soy sauce next time, and try adding different spices to the sour cream for different taste. Also, when you say to "split breasts" I wasn't thinking butterfly and just cut the chicken down the middle LOL, cooked it 40 minutes and it was very moist. Had leftover piece for lunch today!

Creamed Salmon on Toast

Easy Chicken Enchiladas

very easy to make and my husband loved them. Bascially stuck to the recipe except I didn't measure and probably put in only 1.5 cups sour cream and a little more onion and added olives to the top. I made fresh salsa in my processor (tomatoes, jalapeno, garlic clover, onions & salt) and my husband said I'd outdone myself! Also made refried beans, using a can of pinto beans, sauteed garlic & onion, mashed beans and added a little milk.

Potato Salmon Patties

This was fairly easy to make. My husband loved it more than I did, so I would make it again. We're trying to incorporate more fish, specifically salmon, in diet and this added a twist. I whipped some mayo and relish together for and served with corn and a salad. I didn't have any celery salt, but it tasted good so it obviously wasn't a necessary ingredient.

Ham and Cheese Breakfast Casserole

Exellent and so easy to make. I made it for work. Prepared it the night before, popped it in the oven and it was all gone by lunch time. This is a keeper and I could see how great it would be for when you have a bunch of overnight guests.

Hot Spinach and Artichoke Dip

Excellent! I made this as an appetizer for Thanksgiving, followed the exact recipe and my in-laws and husband raved about it. The only drawback: I didn't calculate the expense, but looking back at it, realize it's a pricey dish to make with the herb cheese, artichokes, which are items I wouldn't have readily on hand. I made it again just for my husband as something to eat with his tortilla chips while watching golf! Reheats easily.

Salmon with Creamy Dill Sauce

This recipe is delicious, especially the dill sauce. I don't care for salmon that much but my husband enjoys it and I know it's good for you. This dill sauce though makes the recipe! I didn't have onion salt but I still loved the sauce. This is a keeper. My mother made batter fried zucchini and I used the sauce as a dip.

Curried Coconut Chicken

Another easy, but very tasty recipe. I added sliced green peppers and used a spicy ginger to add a little zest. My sauce didn't thicken up, but it was a good consistency anyway. I didn't simmer it as long because the green peppers were losing their color. I think next time I'll add them when I'm simmering rather than with the onions and garlic. I like the idea of another cook who added potatoes. I think I'll try that next time.

Sweet Potato Casserole VI

Quick & easy to make. I had three sweet potatoes that I decided I didn't want to just bake. Found this recipe and because the three potatoes didn't quite make four cups of mashed potatoes, more like three, I cut down on the amt of ingredients. I only used half the sugar, which I would have also done had I had enough potatoes. I used only one egg, and halved the rest of the ingredients except for vanilla extract, which I almost doubled and put in extra pecans because I love 'em! My mother doesn't give out compliments easily and she loved the dish as did my husband. I'll make this again!

Salmon Avocado Salad

Very tasty and very easy! I added shredded carrots for extra nutrients, but didn't have mushrooms to add. I only used half a fresh jalapeno and that was enough. My husband said it added "just enough" surprise to his tastebuds! I liked the oil & vinegar dressing because it makes it lower caloried, but if I had fresh mangos I would add some to this salad. The mango would help take the bite out of the jalapenos. I'll will make this one again. Thanks!

Chicken Parmigiana

This was such an easy recipe to make and the chicken turned out so moist. The ultimate taste may depend on the sauce you top it with. I tend to buy different brands at the supermarket and rarely keep track of, which I like better. :( I'll make this again.

My mother's Guamanian and like another reviewer, she adds chopped tomatoes but also uses jalapeno peppers, which she scorches over the stove, cuts up & adds.

Sweet Potato Casserole II

DELICIOUS! I did cut down on the white sugar and only put in a 1/2 cup and that was sweet enough. I would even say you could get away with 1/3 cup but you can taste it as you mix it in either way. I didn't have the entire amt of pecan so I added walnuts, which worked but I prefer the pecans in this recipe. This will be a Thanksgiving staple!

Creamy Peach Pie

I made this pie and it turned out great. Although I thought I had heavy cream in my fridge when I started making the pie when it came down to that ingredient, I only had Half & Half so I only pour a tablespoon or two over the pie. It still came out great so I'm thinking that the cream wasn't necessary. I also added a few tsp of cornstarch just because of the reviews which said it didn't set well. I let it cool a few hours and it cut fine, put it in the fridge over night and brought it to work where my coworkers devoured it.
