This is a 5-star with some changes. I doubled the garlic, a bit more cumin, added canned tomatoes, salt & pepper, and a pinch of ground red pepper. We use low-sodium chicken broth because we tend to have it on hand. We add fresh cilantro at serving time(we love lots of it!). DH & I use hot chili paste and lime on ours; our kids like lime w/it too. Really a satisfying meal and one my whole family loves. We make lots of this, have it for dinner and pack it for lunch, and freeze it (w/o cilantro and lime) too! We use brown rice and dried beans, and it's just wonderful.
