Best Toffee Ever - Super Easy

This really is fabulous & one of the easiest recipes ever! Couldn't find the candy thermometer so I used the water test and judged by the color too. I followed the recipe exactly other than using pecans for the nuts.

Coconut Shrimp I

OMG this is absolutely fabulous! We had this recipe on New Year's Day and everyone, from the nine-year-old on up, absolutely loved it. We made a marmalade and honey mustard-based sauce and it was hard not to lick the plate. We did follow the suggestion about pulsing the coconut in the food processor and it worked very well. I would give this 10 stars if I could!

Avocado, Tomato and Mango Salsa

This is the best recipe I have found on this site and I've found quite a few. We double the mango and avocado, add more lime juice and garlic too. But oh, is it good! We love it plain and so do our guests. It's also good with chicken and fish! Tonight we're having it on fish tacos. YUM. It's pretty labor intensive but we get our whole family involved and it's kind of fun. You will NOT regret making this. The only problem is to stop yourself from making it all the time!

Yummy Bok Choy Salad

Wow, this is just terrific! We had bok choy in the garden so tried this on a whim. We subbed Splenda for the sugar and doubled the almonds instead of using chow mein noodles. I do suggest cutting the dressing in half -- there was a ton left in the bottom on the bowl. My mouth is watering just thinking about this salad -- I may need to make it again today!

Pumpkin Turkey Chili

I used the suggestions others made about additional ingredients and seasonings and wow -- we all loved this! We don't like green peppers so we used all yellow. Planned to use ground turkey but after checking out the price, used extra lean ground beef instead. We did serve with some light sour cream and Thai chili paste on the side for DH and I (we like it hot). Our 8 & 10 year old daughters loved it as much as we did. We have it for dinner yesterday and it goes in thermoses for lunch tomorrow! A real keeper -- healthy, tasty, and easy.

Almond-Topped Fish

What a great recipe! I used (lots) of fresh dill, subbed sour cream for the mayo, and topped with lots of sliced almonds that I'd browned. Oh, and omitted the parsley. Whole family (DH & girls ages 8 & 9) agreed it was great. Can't wait to make this again! We used cod.

Grilled Peanut Butter and Banana Sandwich

I made this for my kids, ages 7 & 8, for breakfast this AM. They loved it! We followed the recipe as written, other than buttering the bread instead of using a spray. This will be a nice breakfast when it is cold!

Strawberry Spinach Salad I

This is fabulous -- even my very picky mother, who thinks I like "wierd food" loves it and asks me to bring it to family events. To "healthy up" this recipe, we cut the olive oil in half. We substituted 1/4 Splenda for the sugar. Still plenty sweet!

Awesome Slow Cooker Pot Roast

I use about 3 pounds of roast. No onion soup. We do use cream of mushroom but we sub the Healthy Request. Salt and pepper and flour the roast, sear on all sides. We add garlic and no water -- instead, 1 cup of beef stock and 1/2 cup red wine. On high for awhile and then low, or, if it's a work day, on low for 9 hours. YUM..... we all love it!

This is a superb recipe! I followed it closely other than... didn't have garam masala, and the closest market didn't either, so I used some Rogan Josh seasoning. These were wonderful.

Spinach Brownies

I followed the recipe except for a couple of changes: Instead of 1/2 cup butter, I used 1/4 cup Smart Balance butter spread I added a generous amount of garlic I used 1/2 cup whole wheat flour and 1/2 cup white flour I added a pinch of red pepper It was absolutely wonderful! My version was healthier but oh, it was just so good!

Grilled Lemon Chicken

This is, hands down, the best grilled chicken I have ever eaten. So moist, juicy and flavorful! I am picky and very seldom do I give five stars -- and usually I have to modify the recipe to suit myself. Not this one though. Try it, you'll like it!

Black Beans and Rice

This is a 5-star with some changes. I doubled the garlic, a bit more cumin, added canned tomatoes, salt & pepper, and a pinch of ground red pepper. We use low-sodium chicken broth because we tend to have it on hand. We add fresh cilantro at serving time(we love lots of it!). DH & I use hot chili paste and lime on ours; our kids like lime w/it too. Really a satisfying meal and one my whole family loves. We make lots of this, have it for dinner and pack it for lunch, and freeze it (w/o cilantro and lime) too! We use brown rice and dried beans, and it's just wonderful.

These are good. Most of my family doesn't like green pepper, so we omit it -- and to make it healthy, we double the ingredients other than ground beef, and we add an amount of cooked (from dried) beans to "healthy it up."

Dark Chocolate Cake II

MMM good! So moist and flavorful. I made it even better by using condensed milk in place of some of the milk in this recipe, and like another reviewer suggested, added extra cocoa and sugar. I also beat the eggs before adding them. Only problem is that both layers sunk in the middle. This may be because the baking powder had expired a month before, though, so I'm not sure it was the recipe's fault! This is a real keeper recipe. I made it for my daughter's seventh birthday and topped it with a marshmallow frosting at her request. I'd love to try it with German chocolate frosting as another reviewer suggested. This was a really easy recipe too!

Alisha's Scalloped Potatoes and Ham

With the changes I made, my family loved this. I liked it OK. What I did differently: 1/2 cup of cheese blended with the mashed potato mixture; 1/2 sauteed onion added; 3 cloves garlic added. What I'd change in the future -- try to figure out how the make the mashed mixture so the texture's not so gluey!

Breakfast Burritos

I'd give it 5 stars with my changes! We use sausage (veggie sausage for my daughter who doesn't eat pork) and salsa. We use more cheese and about half the eggs. My DH & kids love this one! It's a snap to make these in bulk and pull them out when needed.

Italian Country Style Ribs

Great recipe! We had a ton of fresh garden tomatoes, so I cut the amount of spaghetti sauce in half, to 16 ounces, and added 16 ounces of fresh juicy chopped tomatoes. I also added some garlic, paprika, oregano, red pepper and basil. Yum! I couldn't stop eating the sauce when I was stirring it. My husband and 3-year-old liked it too.

Mama's Italian Wedding Soup

I like this soup a lot. I tweak it by using beef broth because I tend to use chicken broth quite a bit in cooking and it's nice to have some variety.
