Italian Country Style Ribs

Reviewed: Sep. 28, 2004
Great recipe! We had a ton of fresh garden tomatoes, so I cut the amount of spaghetti sauce in half, to 16 ounces, and added 16 ounces of fresh juicy chopped tomatoes. I also added some garlic, paprika, oregano, red pepper and basil. Yum! I couldn't stop eating the sauce when I was stirring it. My husband and 3-year-old liked it too.

Peanut Butter Kiss Cookies

Reviewed: Sep. 23, 2007
My 5 and 6 year old daughters helped make them! We used 2/3 cup splenda and 1/3 cup splenda brown sugar blend, and added 1/4 cup flour as one reviewer suggested. The kids thought they were good but not great and I agree. They are a little too rich even with the flour added.

Mama's Italian Wedding Soup

Reviewed: Sep. 30, 2007
I like this soup a lot. I tweak it by using beef broth because I tend to use chicken broth quite a bit in cooking and it's nice to have some variety.

Hamburger Casserole

Reviewed: Nov. 20, 2007
Really bland. I had to add garlic, dijon mustard, worcester sauce and sour cream. This was edible as written but nothing I'd make again.

Dark Chocolate Cake II

Reviewed: Nov. 26, 2007
MMM good! So moist and flavorful. I made it even better by using condensed milk in place of some of the milk in this recipe, and like another reviewer suggested, added extra cocoa and sugar. I also beat the eggs before adding them. Only problem is that both layers sunk in the middle. This may be because the baking powder had expired a month before, though, so I'm not sure it was the recipe's fault! This is a real keeper recipe. I made it for my daughter's seventh birthday and topped it with a marshmallow frosting at her request. I'd love to try it with German chocolate frosting as another reviewer suggested. This was a really easy recipe too!

Black Beans and Rice

Reviewed: Jun. 11, 2008
This is a 5-star with some changes. I doubled the garlic, a bit more cumin, added canned tomatoes, salt & pepper, and a pinch of ground red pepper. We use low-sodium chicken broth because we tend to have it on hand. We add fresh cilantro at serving time(we love lots of it!). DH & I use hot chili paste and lime on ours; our kids like lime w/it too. Really a satisfying meal and one my whole family loves. We make lots of this, have it for dinner and pack it for lunch, and freeze it (w/o cilantro and lime) too! We use brown rice and dried beans, and it's just wonderful.

Shrimp Scampi Bake

Reviewed: Oct. 2, 2008
I love butter, I love shrimp, and normally I love shrimp scampi. I really enjoy rich food but this literally made me sick. I appreciated the easy preparation, but I would try this with half the butter and a little more lemon. We did bake this for about 1/2 the time recommended so the shrimp wouldn't be rubbery, and we doubled the garlic. I would give this one star but a friend who dined with us liked it.

Awesome Slow Cooker Pot Roast

Reviewed: Oct. 19, 2008
I use about 3 pounds of roast. No onion soup. We do use cream of mushroom but we sub the Healthy Request. Salt and pepper and flour the roast, sear on all sides. We add garlic and no water -- instead, 1 cup of beef stock and 1/2 cup red wine. On high for awhile and then low, or, if it's a work day, on low for 9 hours. YUM..... we all love it!

Carrot Cake III

Reviewed: Nov. 25, 2008
After all of the rave reviews, I was really disappointed by this recipe. I love sweet things but even though I followed others' suggestions and decreased the powdered sugar in the frosting recipe by 1/2 cup, it was still way too sweet. I ended up having to add more cream cheese and butter to cut the sweetness. The cake itself was moist and good tasting, but you really couldn't taste the carrots much. It just tasted like spice cake.

Strawberry Spinach Salad I

Reviewed: Apr. 13, 2009
This is fabulous -- even my very picky mother, who thinks I like "wierd food" loves it and asks me to bring it to family events. To "healthy up" this recipe, we cut the olive oil in half. We substituted 1/4 Splenda for the sugar. Still plenty sweet!

Tomato Cucumber Salad with Mint

Reviewed: Jul. 15, 2009
Just OK. Used fresh tomatoes and mint from the garden, but still just not an impressive taste. All family members agreed.

Grilled Peanut Butter and Banana Sandwich

Reviewed: Aug. 20, 2009
I made this for my kids, ages 7 & 8, for breakfast this AM. They loved it! We followed the recipe as written, other than buttering the bread instead of using a spray. This will be a nice breakfast when it is cold!

Balsamic-Glazed Salmon Fillets

Reviewed: Sep. 30, 2009
I was really disappointed in this -- after all the great reviews, I was expecting to love it! The sauce added absolutely nothing to a great piece of salmon -- in fact, it detracted. We scraped off as much of it as we could.

Best Toffee Ever - Super Easy

Reviewed: Jan. 6, 2010
This really is fabulous & one of the easiest recipes ever! Couldn't find the candy thermometer so I used the water test and judged by the color too. I followed the recipe exactly other than using pecans for the nuts.

Hamburger Soup III

Reviewed: Jan. 10, 2010
This was extremely bland. I reduced the liquid and added thyme, Worcestershire sauce, balsamic vinegar, a dash of red wine, garlic, celery salt, carrots, a few squeezes of lemon. I'd give it 4 or 4.5 stars with my changes. Family loved it, even picky 9-year-old.

Almond-Topped Fish

Reviewed: Jan. 27, 2010
What a great recipe! I used (lots) of fresh dill, subbed sour cream for the mayo, and topped with lots of sliced almonds that I'd browned. Oh, and omitted the parsley. Whole family (DH & girls ages 8 & 9) agreed it was great. Can't wait to make this again! We used cod.

Bake Sale Lemon Bars

Reviewed: Oct. 28, 2010
I love lemon bars and was really excited to try this. The crust, which I doubled, is great. But the lemon topping, which had a nice consistency, was way too eggy tasting. I found myself peeling off the top and just eating the crust because I just couldn't get used to the eggy taste (which really overpowered the lemon flavor). Will look for another lemon bar recipe.

Brown Rice Bake

The Velveeta negates the healthy choice of making brown rice. And why canned mushrooms instead of fresh? This is truly awful!

Pumpkin Turkey Chili

Reviewed: Nov. 7, 2010
I used the suggestions others made about additional ingredients and seasonings and wow -- we all loved this! We don't like green peppers so we used all yellow. Planned to use ground turkey but after checking out the price, used extra lean ground beef instead. We did serve with some light sour cream and Thai chili paste on the side for DH and I (we like it hot). Our 8 & 10 year old daughters loved it as much as we did. We have it for dinner yesterday and it goes in thermoses for lunch tomorrow! A real keeper -- healthy, tasty, and easy.
