Sweet Corn Muffins

Excellent muffins. This will now be the recipe I turn to for sweet corn muffins. I used melted butter in place of the shortening and let the batter rest 15 minutes prior to filling muffin tins. Yielded 6 regular size muffins and 24 mini muffins.

Black Bottom Cupcakes I

A fabulous cupcake! I cooked for 20 minutes as suggested by others. I will definitely make again, but I will not add chocolate chips to cream cheese mixture. I don't think they are needed, and will save them for another cookie recipe!

Baked Eggs in Canadian Bacon Cups

Great recipe for a small group. I made them even easier by just scrambing eggs with a touch of heavy cream and tossing in some dried dill and dried chives, no peppers or shallots on hand. I'll try with fresh herbs next spring, but I'll be quite satisifed with my dried mixture until then.

Easy Devonshire Cream

Easy and delicious, great as noted with scones and fruit. I took the suggestion of another user and increased the cream cheese to 8oz. Creamy, and wonderful.

World's Best Scones! From Scotland to the Savoy to the U.S.

This is a really great recipe, the scones are light and delicious. I did add a touch more butter to achieve the right consistency. Based on the reviews of others, I did sugar the cookie sheet, omit the egg wash and substitute Craisins TM, for currants. These were brought to a potluck and I knew they were truly superb when ladies were asking "have you tried the scones? They're amazing". A pleasure to say, yes, I brought them. Easily doubled, I made 32 small scones. Thank you Friendlyfood for sharing this great treat.

Apple Pecan Cobbler

Outstanding. I didn't have evaporated milk, so I substituted a can of sweetened condensed milk for the evaporated milk and 1 cup sugar. Fabulous!!

Great Grandma's Pork and Sauerkraut

Very good, I had a 2 lb jar of sauerkraut to use, so I added the whole thing. I rinsed the kraut first and then sauteed. I also added 2 cans of golden pork gravy to the simmering mix, and 1 Tbs brown sugar, and of course salt and pepper to taste. We enjoyed this meal.

Mrs. Sigg's Peanut Butter Cookies

Great, easy recipe. I had Country Crock (TM) in the fridge, and used that instead of butter/shortening. We also added a dollop of jelly to the top before baking. Delicious!!

Bacon Wrapped Barbeque Shrimp

Great recipe, I used BBQ sauce and added a strip of gouda to the wrap. I used smaller shrimp, but cut the bacon into 1/3 slice and it worked out fine, cooking everything evenly. My husband said it was delicious!!

Cranberry Sauce Chicken II

I was surprised how good this was! I used 1/4 cup each mayo and ketchup instead of bottled dressing. Cut the chicken breasts into strips and cooked for 40 minutes. My 2 year old asked for seconds! We'll use this recipe again. Might try making homemade cranberry sauce and using that next time.

Roasted Vegetables

Wonderful! I like to use less Yukon golds and more sweet potatoes. I also add whole mushrooms. Leftovers make fabulous burritos, served with Mexican 4 cheese blend, sour cream and tomatillo salsa. Delicious!

Matzo Brei

Always a favorite in our home. I like to double the recipe, add 2 Tbs wheat germ and 1/2 tsp vanilla. I generally use butter or butter substitute for frying, 1 Tbs per serving. Served with sour cream and maple syrup, this makes a great lunch for me and my 2 year old.

Quick and Easy Green Chile Chicken Enchilada Casserole

Great, and for a vegetarian substitution, try refried black beans. Instead of charring tortilla as described, I just toast in toaster oven. A quick to prepare, delicious dinner.

Apple and Feta Pan Fried Pizzas

Very good ideas, I made a few modifications. We used a Boboli crust with a barbeque sauce base. I fried up 4 slices of bacon and then sauteed onions, apples, 1 Tbs brown sugar and thyme in same pan. Has become a favorite in our home.

Mini Meatloaves

I really enjoyed this recipe, and I am not really a meatloaf eater. We needed to use some ground turkey and thought this recipe sounded good, anything with cheese is worth a try! We used a 9x9 pan, loved the glaze. I will make this again!!

Bacon Cheeseburger Upside Down Pizza

My family loves this recipe. I use ground turkey, add red pepper and 8 oz of mozzarella cheese. Also, for a thicker topping, I like to increase those ingredients by 50%, we tried doubling them and it was too thick.

New Year Spinach Fettuccine with Scallops

Easy recipe, I used fresh spinach and bella mushrooms, with minced garlic. Also prepared differently, sauteed spinach with garlic, then mushrooms. I let wine reduce a bit before adding soup. Removed all, cooked scallops (did not cut the scallops, we love the large sea scallops!!) and then added pasta and all ingredients back to the saute pan. Wonderful!
