Stephan's Broiled Salmon Pesto

Everyone loved this fish and the flavor. The only complaint was from my husband, who didn't like the skin on the bottom. I did have to move the oven rack up a little closer to the heat source to cook the pesto a little more. The only change I made to the recipe was to add salt to the fish before adding the pesto, and sprinkling a little Parmesan cheese on top in the last few minutes of cooking.

Sour Cream Chicken

I didn't have a canned soup so I used a cup of heavy whipping cream and a boullion cube instead. I also added in powdered garlic, seasoning salt, and parmesean cheese. Mine was done after about 45 minutes, then I took the chicken out and thicked the sauce with a little flour and whipping cream. Delicious! The chicken was very juicy as well.

Balsamic Roasted Pork Loin

This was delicious! The only thing I changed was mincing garlic into the marinade. My pork loin was about 3.5 lbs and I cooked it for an hour at 350F and it was almost overdone. Probably 45-50 minutes would have been better, but I will just watch it closer next time. Great flavor though!

Vegetable Soup - Irish Style

This soup is very healthy and tastes great. I added in bay leaves, rosemary, celery seed, salt, white pepper, black pepper, and garlic. I will experiment with different herbs and seasonings next time. I did not drain the water out after I boiled the vegetables. I used my immersion blender to partially blend the soup, leaving a few chunks of vegetables. I did thicken it a little with a cornstarch and water mixture.

Honey Baked Chicken

I made it with spicy brown mustard following a couple of reviewer recommendations: sprinkled salt, garlic, and pepper on the chicken breasts and then poured the sauce mixture on for the entire cooking time. I baked at 350F for 45 minutes (basting a couple of times), and it was a little overcooked, but otherwise tasty. Would do again!

Vietnamese Meatballs

Too wet for skewers, but I baked at 350 fot 30-40 minutes. Added onions, more fish sauce, and msg, and used rice vineagar instead of rice wine. Next time, I will cover them for most of the cooking time to prevent the outside from drying up.

Asian Beef with Snow Peas

This recipe is great. I used rice wine vinegar instead of rice wine (because it's all I had) and it turned out wonderful. Definately double or triple the sauce. The second time I made this I added broccoli as well, and it turned out well.

Apricot Rosemary Roasted Parsnips and Carrots

Glaze was really good - but we thought the parsnips tasted a little odd. I cut the carrots in 1" strips and cut them in half, and they came out just right.

Roasted Rosemary Cauliflower

I have been cooking cauliflower like this for the past several years for parties or just at home, and it is my favorite way to prepare it. Everyone who tries it loves it, and it is great leftover or even cold. I just use salt and pepper with the olive oil, and it is fantastic.

Amazing Pork Tenderloin in the Slow Cooker

I wasn't so fond of this, and neither was my husband. It has a very funny taste to it that we didn't really like. We tried using center cut chops like someone else did, and ti turned out being very tender, but completely dry.

Greek Penne and Chicken

Loved this recipe! Simple to make but a fancy meal. I used marinated artichokes and I used the juice when cooking the onions and garlic. I added extra garlic. I added a can of basil and oregano "flavored" diced tomatoes, with all of the juice. I added extra feta on top of the plate whenever served. I served it with pole beans sauteed with onions and garlic in butter. Excellent meal!

Sage Pork Chops

I didn't have any sage, so I used thyme and it was very good. I also made the gravy like someone else recommended, with cornstarch and milk and it was wonderful. I had thin pork chops so they were a little overdone, but I will adjust the time when I do it again. Excellent flavor!

Tasty Green Beans

I am definately making this one again. I like salty foods, so this recipie was PERFECT for me. However, if you prefer less sodium, you might want to reduce or water down the soy sauce.

Chicken Breasts with Herb Basting Sauce

Very much enjoyed this chicken...but I added more herbs and olive oil and rubbed it onto the chicken instead of just pouring it on top. I also removed the skin. Smelled wonderful as well.

Cheesy Creamed Spinach Casserole

It does have a really strong flavor, and small bites are necessary. However it is a good flavor. I added parmesean cheese to the top to make it more like a casserole for me. If you like french onion dip for potato chips, this is exactly what it tastes like, but spinach instead of chips. My room mate put it on tortilla chips. I think next time I will try adding cream cheese to the recepie to mild out flavor.

Butter Fried Zucchini

I am always looking for new ways to prepare vegetables, and this one seemed pretty easy. However, the flour gives the zucchini a bland taste. However, I am going to try it again with thinner slices of zucchini and some sort of herbed breadcrumbs instead of flour.

Slow Cooker Potato Soup

First of all this soup was extremely bland. I added salt, pepper, and garlic just to choke it down. Secondly, The directions were not very clear on what size of cubes to cut the potatoes into..so I made them bigger. It turned out to be just potatoes with kind of a vegetable gravy. Very unappetizing. There must be better recepies than this one.
