Nana Dot's Irish Soda Bread

Never made Irish soda bread before... awesome! I used 1 cup dried dates instead of raisins/currants and it turned out great.

Lana's Sweet and Sour Meatballs

Made this with kielbasa instead of meatballs, omitted peppers and served over rice. A tasty, quick dinner. The only thing I didn't like was that the carrots stayed crunchy even after simmering for 20 mins, so make sure you dice them into small pieces.

Sloppy Joe Sandwiches

Didn't even need to go to the grocery store for this great dinner, yay! Substituted 1/4 fresh onion and 1 clove garlic. Also added 1/2 tsp chili powder and white wine vinegar. Toasted the buns in a toaster to make them crunchy and counterbalance the sloppy...

Beef Nacho Casserole

A good alternative to just plain nachos for dinner. :-) I used ground turkey, whole grain chips, and subbed sour cream per other reviews. Also halved the ingredients and it fit well in an 8x8 pan. Next time I plan to add black beans, more spices, and use more finely grated cheese.

Key Lime Pie VII

I'm not usually a fan of Key Lime pie, but I had a whole bag of regular limes that needed to be used up. This is the best rated "limey" recipe for good reason! Followed the recipe exactly (other than juicing regular limes) and garnished with thin lime slices at the end. Yum. I may start eating Key Lime pie now (my own!) :-)

Kielbasa and Cabbage II

I made the recipe as directed except reduced pepper to 1 tsp. Unfortunately this was way too spicy for me, definitely reduce the amount of Cajun seasoning. Also be sure to slice your onion rings thin so they soften easier. Served it with rolls for an quick & easy dinner.

Cajun Chicken Pasta

This is my husband's favorite recipe on this site, so I make it at least once a month. I typically use 1 bell pepper chopped small, 1.5 tbs of Cajun seasoning, and mix 2 tsp of cornstarch in 1 cup of half-n-half before adding to the pan. Oh, boil your pasta water while chopping, I always forget to do this and screw up the timing... :-)

Artichoke Spinach Lasagna

My favorite lasagna! I've made it over a dozen times and now make the following adjustments. 1) Don't boil the noodles first. 2) Use 12 oz cooked fresh spinach vs frozen. 3) Use 3/4 onion chopped finely. Thanks for a great recipe, I can't eat meat lasagnas now, this is sooo good!

Potato Skillet

I've made this recipe probably 30 times now so I thought it was about time to review it... :-) Excellent recipe as is! I've also used kielbasa or pork sausage when I didn't have bacon on hand. My extremely lazy version of this is heating up precooked sausage with frozen potatoes and montreal steak seasoning for about 10 minutes, then adding eggs and cheese. I plan to make this at least 30 more times so thank you so much for this recipe!

Southwestern Quinoa Salad

I brought this to a pool party and got a lot of compliments. Since it's not mayo based, it was a safer salad to bring on a hot day. Made the recipe as directed using low sodium chicken broth and adobo seasoning from scratch.

Chilled Cantaloupe Soup

A great way to use up cantaloupe. I used 3/4 cup of freshly squeezed orange juice and threw in a peeled orange. Pureed all the ingredients in my food processor for about 1 min, but I still thought the soup was too thick. So for those that thought the soup was too thin, adding some fresh orange segments definitely thickens it up!

Crustless Spinach Quiche

Great recipe! I used muenster, added 1/4 tsp of nutmeg and sprinkled 1/4 cup of cheese on top after taking it out of the oven. Served with orange slices.
