Elegant Fig Appetizers with Goat Cheese and Almonds

I used dried, pitted figs instead of fresh, and sprinkled pre-sliced almonds on top, and it was still absolutely tremendous! Plus, it was only a matter of minutes to prepare and a breeze to serve. This will definitely be a new "go to" recipe!

Molten Chocolate Cakes With Sugar-Coated Raspberries

Absolutely fabulous. I also used ramekins which make a nice presentation and easy individual portions. Though using high-quality chocolate, such as Ghirardelli, is a MUST. The perfect addition to a romantic dinner.

Sugar Coated Pecans

So simple, yet everyone raves over these! Definitely addicting, too. I always stock up when pecans are on sale specifically to make these. They're also great to freeze and have on hand for impromptu guests!

Cinnamon Coffee Frosting

Absolutely amazing ... made to top Cappuccino Bon Bons from this site. I did make a few minor modifications: I added a tbsp of unsweetened cocoa powder and a splash of vanilla flavored coffee creamer, and reduced the milk and confectioners' sugar by probably half (eyeballed it). The result was an incredibly smooth, fluffy and absolutely delectable topping. I can't wait to try this on other desserts!

Easy Morning Glory Muffins

Fantastic base recipe to add in whatever goodies you have on hand! A few tips to reduce the oil: with one batch I added two ripe mashed bananas and reduced the oil to 3/4 cup, and with another batch I replaced half the oil with fat free sour cream - and both times, they turned out fantastic!! Use whatever fruit / veggies / nuts combo you have on hand - and you can easily substitute some of the sugar for honey, maple syrup or a splash of o.j. I love throwing in whatever I need to use up - from dried cranberries, zucchini, sunflower seeds - it has all worked wonderfully. I do sprinkle a touch of brown sugar on tops just before baking.

Pineapple Pretzel Fluff

I've never gotten such kudos on a potluck dish that was so rediculously easy. It almost felt like cheating :) But it is definitely a keeper for a quick throw-together dish for a gathering.

Baked Stuffed Winter Squash

Very good base recipe. I made it with chicken sausage, replaced the raisins with chopped apples and steamed brown rice in place of the bread crumbs. It's pretty much a no-fail recipe, and super easy. Plus, it's a fantastically warm and comforting dish with great fall flavors.

Egg and Cheese Puffs

Quite good!! In my ongoing attempt to sneak in veggies where I can, I added some finely diced broccoli crowns (saying it was spices), and replaced the chilis with finely sliced green onions. I also substituted the bacon with veggie bacon, used half the butter and half the shredded cheese, and whole wheat flour in place of regular, and it was all a wonderful combination! I made a mix in a regular muffin tin and a mini-muffin tin, and the mini-muffins were everyone's favorite. I will definitely make this again - all as minis, and play around with various mix-ins.

Pudding Cookies I

If you're using sugar free pudding mix, be sure to add either 1/4 cup sugar or brown sugar, or a few tablespoons of light corn syrup. Otherwise your chocolate cookies will taste quite bitter, as other reviewers have mentioned.

Creamed Spinach Casserole
