Carrot Cake I

Yummy! My husband, who's very hard to please, even had seconds of this. I did decrease the oil to 1 cup instead of 1 and 1/4 cups. I also baked this in a 9 x 13 pan - it took about 45 minutes. I will definitely make this again. Thanks!

Meat Filled Manicotti

I cut this recipe in half because I was just making it for two. It is so easy and good! I used Italian seasoning instead of just oregano, and I used a whole egg instead of just egg white - it came out fine. I also added a little bit of chopped up onion to the meat while I browned it. Will definitely make this recipe again and again.

Slow Cooker Chicken and Dumplings

I agree - this is a great basic recipe, but I only gave it four stars because it needs some "tinkering." It does have a lot of possibilities, though. You can add whatever seasonings you're in the mood for. My version of this uses a little bit of poultry seasoning, some garlic powder, one chopped onion, and whatever frozen vegetables I have on hand. About 45 minutes before serving, I cut up the biscuit dough into thirds and just drop them onto the top of the chicken mixture. No stirring needed. They came out just perfect.

V-Eight Vegetable Beef Soup

This is so easy and so good! Definitely a keeper. The flavors are even better the next day as leftovers. Next time I might add some chopped potato or even frozen hashbrowns for something a little different. Thanks for this recipe.

Upside Down Caramel Apple Pie

Overall this is a good recipe. I did lower the temperature to 375 degrees F as my oven tends to cook to hot anyway. Also, a somewhat shorter baking time was a must or it gets too brown. Oh, and be sure to not leave in the pan to cool for longer than 5 minutes. No, it's not that pretty, but vanilla ice cream on top will fix that!

Diabetic Dog Treats

Pumpkin Bread

This is by far my favorite pumpkin bread recipe. To dress this up a little, it's fun to drizzle a little maple syrup over a thick slice, then top with a dollop of whipped cream.

Lower Fat Banana Bread I

My only changes to this recipe were a teaspoon of vanilla added, and I used low-fat milk instead of the water. I've made this several times and for low-fat it's not a bad recipe at all.

Zucchini Patties

This is definitely one of those keeper recipes. I found it works for yellow summer squash, too. Thanks for sharing this! We're at that stage of the garden where it's hard to find a use for all of the zucchini.

My kids grew up on these - yes, we're from Iowa, too. Used to be able to get them at local fast food restaurants! Would definitely follow the suggestion to use Rhodes Texas-sized dough - and yes, they must be rolled THIN!
